Savory Potato Gratin

Sauté onions in butter in a large skillet until soft or transparent
- 4 to 5 Medium Potatoes, peeled and sliced
- 1 Medium Onion, sliced
- 2 Tbsp Butter or Margarine
- 4 Cloves Garlic, pressed
- 1 tsp Salt
- Dash of Black Pepper
- Dash of Nutmeg
- 1 tsp Dried Thyme Leaves
- 3 Tbsp Parsley, chopped
- 1/2 cup Whipping Cream
- Paprika, optional
Herb Chicken

Rinse chicken, remove fat and giblets
- 1 Whole Roasting Chicken, 3 lbs.
- 2 Cloves Garlic, minced
- 3 Tbsp Rosemary, minced
- 3 Tbsp Tarragon, minced
- 2 Tbsp Butter, softened
- 1 Bay Leaf
- 1 Tbsp Oil
- Salt and Pepper
- 1 sm. Onion, cut in wedges
- 1 Tbsp Butter
- 1/4 cup Water or White Wine

- 1 Tbsp Butter or Margarine
- 1/2 pkg. Frozen Puff Pastry Sheets
- 1 Egg
- 1 Tbsp Water
- 4 0z. Alouette Garlic and Herb Spreadable Cheese
- 1/4 cup Fresh Parsley, finely chopped
Italian Chicken

In heavy 2-qt. saucepan, melt butter
- 2/3 cup Sweet Cream Butter
- 1/2 cup Fine Dry Bread Crumbs
- 2 Tbsp Grated Parmesan Cheese
- 1 tsp Basil Leaves
- 1 tsp Oregano
- 1/2 tsp Garlic Salt
- 1/4 tsp Salt
- 2 Chicken Breasts
- 1/4 cup Dry White Wine or Apple Juice
- 1/4 cup Chopped Green Onion
- 1/4 cup Chopped Parsley
Scalloped Potatoes

Toss potatoes with flour until coated
- 2 1/2 lbs. Red Potatoes, skins on and sliced
- 1/4 cup All – Purpose Flour
- 1 Clove Garlic, minced
- 1 Shallot, chopped
- 1/2 tsp Crushed Red Pepper
- 3 Tbsp Butter or Margarine
- 1 1/4 c. Milk
- 1 1/2 c. Whipping Cream
- 1/2 tsp Salt
- 1/4 tsp Pepper
- 1 1/2 c. (6 oz) Gruyere Cheese, grated
- 1/2 cup Parmesan Cheese, grated
Italian Chicken Kabobs

To make the marinade: in a small bowl whisk together the marinade ingredients
- For the marinade:
- 1/2 cup extra-virgin olive oil
- 2 Tbsp white wine
- 2 Tbsp finely chopped fresh thyme
- 1 Tbsp minced garlic
- 1 tsp kosher salt
- 1 tsp freshley ground black pepper
- 2 lbs bonelss, skinless chicken thighs (I used breasts)
- 1 zucchinni
- 1 green bell pepper
- 20 large cherry tomatoes

In a large skillet, heat oil over medium-high heat
- 3 Tbsp Vegetable Oil
- 1 Medium Onion, halved and thinly sliced
- 2 Clove Garlic, minced
- 4 Skinless – Boneless Chicken Breast Halves, sliced thin
- 1/2 tsp Salt
- 1/4 tsp Pepper
- 1/4 cup Lime Juice
- 1/2 cup Cilantro
Parmesan Baked Chicken

Preheat oven 375-450 degrees (comments varied)
- 1/2 cup Parmesan Cheese
- 1 cup greek yogurt, not fat free
- 1 tsp garlic powder
- 1 1/2 tsp seasoning salt
- 1/2 tsp pepper
- OR
- 1/2 cup Hellmann's Real Mayo
- 1/4 cup parmesan
- 4 chicken breasts
- 4 tsp. seasoned bread crumbs (I used panko instead)
