Carrots and Lentils in Olive Oil

1. Combine the lentils with 3 cups water in a saucepan, and bring to a boil
- 1 cup brown, green or black lentils, rinsed
- 3 cups water
- 1/4 cup extra virgin olive oil
- 1 onion, halved lengthwise, then sliced thin across the grain
- 1 teaspoon coriander seeds
- 4 garlic cloves, minced
- 1 1/2 pounds carrots, peeled and sliced thin (about 4 cups sliced)
- 1 tablespoon tomato paste dissolved in 1 cup water
- 1 teaspoon sugar
- Salt to taste
- 1/2 cup chopped fresh mint

Most important part of this recipe, is to leave the cream cheese out for a couple hours at room temperature
- 1/3 cup of lemon or lime juice
- 1 can of sweetened condensed milk (14 oz.)
- 1 8 ounce package of cream cheese
- 1 8 ounce tub of cool whip
Pistachio-Orange Biscotti

(Mark used one cup nuts and half of a cup orange-flavored cranberries and eliminated the zest)
- 1 3/4 c (9 oz/ 280 g) all-purpose flour
- 1/2 t. baking soda
- 1/2 t. baking powder
- 1/8 t. salt
- 1/2 c. (1/4 lb./125 g) unsalted butter, at room temperature
- 1 c. (8 oz./250 g) granulated sugar
- 2 T grated orange zest
- 1 1/2 t. vanilla
- 2 eggs
- 1 1/2 c. (6 oz./185 g) unsalted shelled pistachio nuts
Homemade Salisbury Steaks

.Take a cookie sheet and cover it with foil, pre heat oven to 350-375°F
- 2 lbs uncooked ground beef
- 3 tablespoons Worcestershire sauce (or more if you desire)
- 1 teaspoon garlic powder
- 1 dash salt and pepper
- 2 cups beef gravy
Grilled Green Beans

1. Mix all ingredients except the Parmesan cheese in a large Ziploc bag
- 8 oz green beans
- 1 tbsp lemon juice
- 1 tbsp extra virgin olive oil
- 1 tsp garlic powder
- 1/2 tsp kosher salt (optional)

Baked Tomato-Cilantro Chicken

1. Preheat overn to 400 2
- 1 T. lime juice
- 1/2 t. salt
- 1/8 t. ground hot red pepper
- 4 boneless, skinned chicken breast halves (about 1 pound), slightly flattened
- 3 T. olive oil
- 1 medium size onion, chopped
- 1 small sweet green pepper, cored, seeded and chpped
- 1 clove garlic, finely chopped
- 1/4 c. chopped fresh cilantro OR 2 t dried cilantro and 3 T. chopped fresh parsley
- 1 1/4 pounds ripe tomatoes, sliced (about 4 medium-size)
- 4 oz. shredded Monterey Jack cheese (1 cup)
Stuffed Jalapenos

Preheat over 425. Cook sausage until browned
- 1 lb ground sausage (HOT if ya like! )

Eggplant Cutlets

Preheat oven to 350. Grease a 10 X 15 inch sheet pan with nonstick spray
- 1 very large eggplant, cut into 12, 1/2" slices
- Batter
- 1 c. mayo
- 1 T red curry paste
- Mix well and set aside
- Breading
- 6 c. panko bread crumbs
- 1/2 c. nutritional yeast flakes
- 2 t. onion powder
- 1/2 t. garlic powder
