1. Combine the lentils with 3 cups water in a saucepan, and bring to a boil

  • 1 teaspoon coriander seeds
  • 4 garlic cloves, minced
  • 1 1/2 pounds carrots, peeled and sliced thin (about 4 cups sliced)
  • 1 tablespoon tomato paste dissolved in 1 cup water
  • 1 teaspoon sugar
  • Salt to taste
  • 1/2 cup chopped fresh mint
