Shrimp and Shiitake Rice Bowl

Just 206 calories per 1 1/4 C serving
- 1 (8.8-ounce) pouch precooked brown rice (such as Uncle Ben's)
- 1 tablespoon canola oil, divided
- 1 large egg, beaten
- 24 large shrimp, peeled and deveined
- 1 cup sliced fresh shiitake mushrooms (about 12 medium)
- 1/2 cup chopped white onion
- 1 tablespoon minced peeled fresh ginger
- 2 garlic cloves, thinly sliced
- 4 ounces snow peas, trimmed
- 1/2 large red bell pepper, cut into 1/2-inch strips
- 2 tablespoons lower-sodium soy sauce
- 2 tablespoons oyster sauce
- 1 green onion, thinly sliced
Cranberry Cole Slaw

In a large bowl, combine the cabbage, onion and cranberries and toss to combine
- 6-8 C shredded cabbage (a mix of red and green is nice, but it all ends up red at the end of things)
- 1/4 lg red onion, thinly sliced
- 1 C dried cranberries
- Dressing
- 1/3 C cider vinegar
- 1/3 C vegetable or canola oil
- 1/3 C sugar
- 1 tsp whole celery seed
Baked French Fries

Cut potato into wedges. Mix olive oil, paprika, garlic powder, chili powder and onion powder together
- 1 large baking potato
- 1 tablespoon olive oil
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chili powder
- 1/2 teaspoon onion powder
- Preheat oven to 450°F.
Cheese Grits

Okay, so these "grits" don't call for grits but it's an Alton Brown recipe with 5 stars so it must be good
- 2 cups whole milk
- 2 cups water
- 1 1/2 teaspoons kosher salt
- 1 cup coarse ground cornmeal
- 1/2 teaspoon freshly ground black pepper
- 4 tablespoons unsalted butter
- 4 ounces sharp Cheddar, shredded
Green Salad with Chicken and Sesame Ginger Dressing

- Dressing:
- 1/2 Cup vegetable (canola) oil
- 1/4 Cup vinegar
- 1/3 Cup brown sugar
- 2 TB. soy sauce
- 2 tsp. sesame oil
- 1/2-1 tsp. POWDERED GINGER
- 1/4 tsp. GARLIC (optional)
- 1/4 tsp. GROUND WHITE or BLACK PEPPER (optional)
- Chicken:
- 2 boneless skinless chicken breasts
- 2-4 Tbs Sesame Ginger Dressing
- Salad:
- 1 head romaine or your favorite lettuce, cleaned and cut
- 1 4-oz. can Mandarin oranges, drained
- 1 small red onion cut in rings
- 1/2 Cup Sesame Ginger Dressing (to taste)
Beer Braised Brats

In a 4-quart Dutch oven, heat butter over medium heat
- 2 Tbsp butter
- 1/2 C thinly sliced onion
- 1 12 ounce bottle or can dark German beer
- 1 Tbsp packed brown sugar
- 1 Tbsp vinegar
- 1/2 tsp caraway seeds
- 1/2 tsp dried thyme, crushed
- 1/2 tsp Worcestershire sauce
- 5 bratwurst links (1-1/4 pounds)
- 5 buns, bratwursts buns, or other crusty rolls, split and toasted
Stuffed Snow Peas

Put peas in bowl and cover with boiling water
- 100 snow peas (~1 1/4#)
- 1 # cream cheese
- 1/4 C parmesan cheese
- 3 Tbsp catsup
- 2 tsp dried dill
- 1 tsp mustard
- 1 tsp Worcestershire
- 1 tsp salt
- 1/2 tsp white pepper
Spinach Artichoke Dip

A friend shared this recipe with me years ago and said it was Houston's Spinach Artichoke Dip
- 2 boxes frozen spinach
- 8 oz sour cream
- 4 oz cream cheese
- 1 C Parmesan cheese
- 1 can artichoke hearts
- 1/2 white onion, chopped
- 1 stick butter
- 8 oz Monterrey Jack cheese
Copenhagen Meat Balls

Return meatballs to sauce, cover and simmer gently for 1 hour
- Mix and form into balls using fat to fry in heavy skillet until brown. Remove and prepare sauce:
- 1 # ground beef
- 1/2 # sausage
- 3/4 C bread crumbs
- 1/4 tsp pepper,
- 2 T shortening
- 1 beaten egg
- 1/2 C water
- 1/4 tsp nutmeg
- 3/4 tsp Accent
- 1 1/2 tsp salt
- 3 Tbsp drippings from meatballs
- 3 Tbsp flour
- 2 1/2 C water
- 1 small pkg dehydrated onion soup
- 1/2 C evaporated milk
- 1/2 tsp each of Worcestershire, Accent and salt
Sour Cream Coffee Cake

Add remaining batter and top with remaining sugar mixture
- Cream:
- 1 stick oleo
- 1 C sugar
- 2 eggs
- 1 tsp vanilla
- Sift:
- 2 C flour
- 1 tsp soda
- 1 tsp baking powder
- 1/2 tsp salt
- Add to cream mixture with 1 C sour cream.
- Pour 1/2 of the batter in a bundt pan and sprinkle 1/2 of the following:
- 1/3 C brown sugar
- 1 tsp cinnamon
