- 2 skinless boneless chicken breast
- 1 cup diced tomatoes
- 1 Tbsp. garlic
- 1/4 cup chicken broth
- 2 Tbsp. white wine
- 1/2 tsp. oregano
- 1/4 tsp. thyme
- 1/4 tsp. rosemary
- 1/4 tsp. pepper
- 2 Tsbp. cream
- 1 Tsbp. fresh basil
Pumpkin Squares

These squares are easy to make and have all of the flavour of pumpkin pie without the work
- 2 cups (500 mL) flour
- 1/2 cup (125 mL) icing sugar
- 1 cup (250 mL) unsalted butter, cubed
- 1 tsp (5 mL) salt
- 3 eggs, beaten
- 2 cups (500 mL) canned puréed pumpkin
- 3/4 cup (175 mL) packed brown sugar
- 1/3 cup (75 mL) corn syrup
- 1/2 cup (125 mL) whipping cream
- 2 tsp (10 mL) lemon juice
- 1 tsp (5 mL) vanilla extract
- 1 tsp (5 mL) cinnamon
- 1/2 tsp (2 mL) allspice or nutmeg

- Topping
- 2 tbsp (25 mL) butter

Banana Oatbran Lowfat Muffins

- 1 cup oat bran ( or 2 cups oatmeal)

- 2 cups whole wheat flour
