Muffins-Carrot

Bake at 350* for 25-30 minutes
- 1 cup white sugar
- 2 eggs
- 1/3 cup of canola oil
- 1/3 cup apple sauce
- 1/2 cup crushed pineapple with juice
- 1 tsp. vanilla
- 11/2 cups flour( or 21/2 if recipe is doubled)
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1 tsp. salt
Three-Hour Braised Pork Roast

Heat butter in a roasting pan and cook onions for 1 to 2 minutes, until transparent
- 3 tbsp (45 ml) butter
- 1 onion, chopped
- 3 lb (1.5 kg) pork roast, cut from leg or loin
- Salt and pepper, to taste
- 1/2 pumpkin, cut into chunks
- 12 mushrooms, whole or sliced
- 4 cloves garlic, whole
- 10 pearl onions
- 2 fresh tomatoes, crushed
- 2 tbsp (25 ml) chopped fresh parsley
- 4 cups (1 L) beef or chicken broth
- 2 tbsp (25 ml) chopped green onions
Scalloped Potatoes-Ham and Cheese

This is a recipe handed down in our family
- 4 4cups cups(1 L) (1 L) sliced red potatoes
- 3 3large largethinly sliced spanish onionspanish onions
- 1 1can cancondensed milk
- 10 10slices slicesfrying ham, thinly sliced, cut in quarters
- 2 2cups cups(500 mL) (500 mL) grated Cheddar cheese
- pinch pinchsalt, optional
- pinch pinchpepper, optional
- 1/2 1/2cup cup(125 mL) (125 mL) milk
Puffed Apple Pancake

Sturdier fruits can be sautéed first and baked right into the pancake or set aside to be served on top
- 2 apples or pears (my current favorites are Jonagold and Cripps Pink)
- 1-2 Tbsp. canola oil
- 1-2 Tbsp. butter
- 1-2 Tbsp. sugar or honey
- Pinch cinnamon
- 3 large eggs
- 3/4 cup all-purpose flour
- 3/4 cup milk
- Maple syrup or vanilla yogurt for serving (optional)
Salmon-Irish Roasted

Salmon fillets marinated in Irish whiskey and honey have a glazed look as well as a superb taste and texture
- 2 tbsp (25 mL) honey
- 1/4 cup (50 mL) cider vinegar
- 1/4 cup (50 mL) Irish whiskey
- 2 tsp (10 mL) chopped fresh thyme
- 11/2 tsp (7 mL) grated lemon zest
- 2 tbsp (25 mL) vegetable oil
- Salt and freshly ground pepper
- 4 salmon fillets, 6 oz (175 g) each
Chicken Breasts with Citrus Fruit and Cream Cheese Sauce

Season chicken breasts with salt, pepper and rosemary
- Creamy Citrus Fruit Sauce:
- 4 half chicken breasts, boneless and skinless
- Salt and pepper
- Rosemary, ground
- 1 tbsp (15 mL) olive oil
- 1 tbsp (15 mL) butter
- A few orange and grapefruit quarters peeled of both skins (to garnish)
- Half the quarters of 1 orange and 1 grapefruit, peeled of both skins
- Olive oil
- Butter
- 1 garlic clove, chopped
- 1/4 cup (60 mL) dry white wine
- 4.5 oz (125 g) Canadian Cream Cheese*
- Salt and pepper
Brittle -- Aaron's Buttery Cashew

Line a baking sheet with a lightly buttered piece of waxed paper, set aside
- 2 sticks salted butter (no substitutions)
- 1 cup sugar
- 1 Tablespoon light corn syrup
- 1 1/2 cup cashews (whole, halves or pieces - salted or unsalted)
Marinade--- Sesame

- 2 tbsp. oriental sesame oil (or olive oil)
- 2 cloves garlic (minced)
- 1/2 tsp. pepper
- 1 tsp. sea salt
Warm Chocolate Cake

- 6 oz (175 g) bittersweet chocolate
- 2/3 cup (150 mL) unsalted butter
- 1/3 cup (75 mL) sugar
- 6 egg yolks
- 3 egg whites
- 1/3 cup (75 mL) all-purpose flour
Chicken - Maple and Grilled Fruit

Maple syrup and orange juice adds great flavour
- 1/2 cup frozen orange juice concentrate undiluted
- 1/2 cup maple syrup
- 1 tbsp. vegetable oil
- 1 tsp. curry
- 1/4 tsp. cayenne pepper
- 8 skinless, boneless chicken breasts
- 3 sweet peppers,seeded and halved
- 3 mediun zucchini, sliced in half
- 2 oranges, cut into 1/2" slices(optional)
- 1 pineapple, peeled and sliced into 1/2" rounds
