  • 2 bay leaves
  • 6 cups low sodium chicken broth
  • 2 cups water
  • 2 tablespoons salt-free poultry seasoning
  • 3 tablespoons butter
  • 2 tablespoons olive oil (or substitute more butter)
  • 1/2 cup all purpose flour
  • 2 cups milk (see note)
  • salt and pepper to taste

  • 1 1/2 - 2 pounds thin chicken breast (i.e. Nature's Promise individually wrapped portions), cubed and then sprinkled with olive oil
  • 1 cup seasoned panko bread crumbs
  • 1/2 cup flour (or House-Autry Chicken Breader) with 1 tsp. Mrs Dash, 1 tsp. paprika, and Salt & Pepper
  • 2 eggs beaten lightly

  • 10 bamboo skewers (soaked in water for 30 minutes)
