- 1 16-ounce bag brown or green lentils
- 2 garlic cloves, smashed
- 2 bay leaves
- 6 cups chicken stock
- 1 onion, peeled
- 2 celery stalks
- 2 carrots, peeled
- 2 tablespoons olive oil
- 14-ounce can diced tomatoes
- 14-ounce can chickpeas, drained
- Sea salt and pepper
- 2 tablespoons chopped parsley
- Parmesan cheese, freshly grated, for serving
Basil and Peach Pork Tenderloin

INSTRUCTIONS: In a food processor, combine all ingredients except pork tenderloin; blend until smooth
- INGREDIENTS: 1 shallot

Place the asparagus in a steamer basket; place in a saucepan over 1 inch of water
- 1/2 cup cut fresh asparagus (1-inch pieces)
- 1 teaspoons cornstarch, divided
- 1 egg white
- 3/4 pound boneless skinless chicken breast, cubed
- 2 teaspoons canola oil
- 1/4 cup sherry or chicken broth
- 2 tablespoons reduced-sodium soy sauce

Set a large heavy-bottomed pot with a tight-fitting lid over medium heat
- 3/4 cup finely diced celery
- 1 cup chopped bell pepper
- 2 tablespoons minced garlic
- 4 tablespoons bacon drippings (canola oil may be substituted)
- 3 tablespoon minced flat-leaf parsley (reserve stems)
- 6 ounce smoked ham, cut in 1/2-inch cubes
- 1 bay leaf
- 1/2 teaspoon dried thyme
- Dash cayenne pepper
- 1 3/4 cups stock (chicken stock or cold water may be used, or make a simple shrimp stock by boiling, the shells and onion skins for about 10 minutes. See below)
- Splash of olive oil
- 1 (15-ounce) can whole peeled tomatoes, roughly chopped
- 3 tablespoons tomato paste
- 1 3/4 cups uncooked converted rice
- 1 pound medium-size raw shrimp, peeled and deveined (reserve shells for making stock)
- Kosher salt to taste

- 1 cup butter (part margarine)
- 1 1/2 cups sugar
- 2 eggs
- 2 3/4 cups flour
- 2 tsp cream of tarter
- 1 tsp salt
- Roll into balls size if small walnut
- Roll into:
- 2 tablespoonfuls of sugar and 2 TB cinnamon
