SWEET POTATO PIE CASSEROLE (Linda's)

Combine in 2 qt. Casserole dish and top with following: Topping: ½ cup brown packed sugar ¼ cup flour 2 tsp
- 10-12 yams (boil then skin peels right off) OR 1 large can and 1 small can of yams
- 1 cup sugar
- 1/2 cup melted butter
- 2 beaten eggs
- 1 tsp. vanilla
- 1/3 cup milk
- Linda uses 10-12 / i use to use 7-8
- another option is to measure: 5 cups cooked sweet potatoes, mashed (about 5-6 medium sweet potatoes)

It's my first day home from Vegas
- It's my first day home from Vegas. For today's lunch I made gluten-free pasta with sautéed garlic, pine nuts, olive oil, burned butter, hot red pepper flakes, Himalayan sea salt and fresh flat leaf Italian parsley.
Shrimp Creole

Bring shrimp to boil just until it turns pink (don't cook all the way)
- 1 1/2 lb. Large Shrimp (I used frozen)
- 2 14oz. cans of peeled tomatoes
- 1 Green pepper (diced up)
- 1 stock of celery
- 1 medium onion
- cayenne pepper (red)
- salt/pepper
- 1 Tbsp. flour
- 1 bay leaf
- 1/2 - 1 stick of butter

- 2 ounces almonds (to yield 1/2 cup ground almonds)
- 5 tablespoons unsalted butter
- 1/4 cup firmly-packed light brown sugar
- 2 tablespoons granulated sugar
- 2 tablespoons light corn syrup
- 1/3 cup all-purpose flour
- 1/8 teaspoon salt

Mix all ingredients together
- 2 lbs. Veal, Pork, Beef mixture (Denise S uses 90% lean)
- 4 Eggs (2 for every lb.) – Denise S uses 2 eggs for every pound
- 2 Tbsp. parsley
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/2 tsp. garlic powder
- 1/2 cup parmesan cheese
- 3/4 c. of bread crumbs (Denise S uses 1/2 cup Progresso bread crumbs for every pound)
- 1/2 onion chopped (denise does not use onion- garlic only)
- 1 clove garlic
Chicken Breast stuffed with pepper jack cheese & spinach

Directions Preheat oven to 180 (350 degreesf )
- Ingredients
- 1 lb boneless, skinless chicken breasts
- 4 oz pepper jack cheese, shredded (you can use up to 6 oz)
- 1 c frozen spinach, thawed and drained (you can also use fresh cooked spinach)
- 2 tbsp olive oil
- 1 tbsp breadcrumbs (I use Italian style)
- Sea salt, to taste
- Freshly ground black pepper, to taste
- Lots of toothpicks
TOMATO-DILL SALSA (Joe Verna)
