Armadillo Eggs

Mix Jimmy Dean sausage, bisquick, and 3/4 cup of shredded cheese
- 1 lb Jimmy Dean breakfast sausage (not cooked)
- 1 1/2 cup Bisquick
- 3 cups shredded colby and cheddar cheese (lg pkg)
- 1 can sliced pickled Jalapena's - mild; medium size can
- 3 lg eggs beaten
- 2 boxes Pork Oven Fry
Black-Bean and Brown-Rice Cakes

This recipe makes enough to serve four as a main course
- 2 cans (15 ounces each) black beans, rinsed and drained
- 2 large scallions, coarsely chopped
- 1 jalapeño, seeded and chopped
- 1/4 teaspoon ground cumin
- 3/4 cup cooked brown rice (see above)
- Coarse salt and ground pepper
- 1 tablespoon extra-virgin olive oil
- 1/2 cup plain low-fat yogurt
- 1 tablespoon finely chopped fresh cilantro, plus leaves for serving
- 1 tablespoon fresh lime juice

1. In 4-quart Dutch oven cook onion, celery, bell pepper, and garlic in butter until tender

- 2 small zucchini, unpeeled, quartered lengthwise and cut into 1-inch lengths
- 4 asparagus spears (about 5 inches long), peeled, trimmed and cut into thirds
- 1 1/2 cups green beans, ends trimmed, cut into 1-inch pieces
- 1/2 cup fresh or frozen peas
- 4 tablespoons olive oil
- 2 cups thinly sliced mushrooms
- 1 teaspoon finely chopped fresh red or green chili pepper, or about 1/2 teaspoon dried red pepper flakes
- 1 teaspoon finely chopped garlic
- 3 cups seeded, diced ripe tomatoes, juices reserved
- 1/4 cup chopped fresh parsley

- 1 green bell pepper, seeded and chopped
- 2 medium carrots, peeled and chopped
- 1 pound stewing beef, cut into 1-inch cubes

- 24 -ounce jar tomato-based pasta sauce
Hash Brown Potato Casserole

- 3 lb shredded hash brown potato
- 3 cans cream of celery or chicken (or 1 or 2 of each)
- 3 cans cream potato soup
- 18 oz carton sour cream
- 3/4 cup milk

Pineapple-Rum Mustard

Grind the mustard seeds in a mortar and pestle or a spice mill
- 2 tablespoons yellow mustard seeds
- 1 tablespoons brown mustard seeds
- 1 1/2 tablespoon mustard powder
- 1/4 cup crushed fresh pineapple
- 1 teaspoon stripped fresh thyme
- Salt and a small pinch dried Scotch Bonnet chile, or to taste
- 2 teaspoons demerara sugar
- 6 tablespoons dark rum (the amount will vary depending on the thickness desired)

- 1/2 cup chopped fresh basil
- 2 tablespoons minced fresh oregano
- 1 cup unbleached all-purpose flour

- 1 loaf challah, brioche, or Italian bread, torn or cut into bite-size pieces
