Chicken Breasts with Sun-dried Tomato Sauce

Mix tomatoes and broth; let stand 30 minutes
- 1/4 cup coarsely chopped sun-dried tomatoes
- 1/2 cup chicken broth
- 4 boneless, skinless chicken breast halves(about 1 pound)
- 1/2 cup sliced fresh mushrooms
- 2 tablespoons chopped green onions(with tops)
- 2 cloves garlic, finely chopped
- 2 tablespoons dry red wine
- 1 teaspoon vegetable oil
- 1/2 cup skim milk
- 2 teaspoons cornstarch
- 2 teaspoons chopped fresh or 1/2 teaspoon dried basil
- Hot cooked fettuccine
Patio Daddy-O Planter's Punch

Fill a cocktail shaker with ice and add juices and rum
- 1 1/2 cups cracked ice or 6 ice cubes
- 4 ounces (1/2 cup) chilled pineapple juice
- 2 ounces (1/4 cup) chilled orange juice
- 2 ounces (1/4 cup) chilled fresh lime juice
- 2 ounces (1/4 cup) dark rum
- Grenadine
- Garnishes: pinneapple wedges, maraschino cherries, orange slices, lime slices
Vidalia Onion and Granny Smith Apple Chutney

Place all ingredients in large pot and allow to cook down for 1 to 1 1/2 hours until most liquid evaporates
- 3 Granny Smith apples, peeled, cored, and small dice (6 cups)
- 2 Vidalia or other sweet onion, medium dice (3 cups)
- 2 cups sultana raisins
- 1 teaspoon minced ginger
- 1/2 cup sugar
- 1 cup apple cider
- 1/2 cup cider vinegar
- 1 cinnamon stick
- 3 cloves
- 1 bay leaf
- 1/2 teaspoons salt
- 1/4 teaspoon ground white pepper
Roasted Root Vegetable Salad

Peel parsnips, carrots, celery root
- 1 pound parsnips
- 1 pound carrots
- 1 pound beets
- 1 each celery root
- 3 tablespoon olive oil
Cranberry Raisin Bread

Mix dry ingredients. Mix orange juice, butter and add water to make total 3/4 cups
- 2 cups flour (10 oz)
- 1/2 tsp salt
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 cup sugar (7.5 oz)
- 2 tbsp melted butter
- 1/2 to 2/3 cup orange juice
- 1 egg well beaten
- 1 1/2 cup chopped cranberries (6 oz)
- 1 cup raisins (6 oz)
Carolina Gold BBQ Sauce

Combine all ingredients in a saucepan and simmer for about 5 minutes to dissolve sugar
- 1 1/2 C French's prepared mustard
- 5 T brown sugar
- 4 T tomato paste
- 3 T apple cider vinegar
- 1 T Worcestershire sauce
- 1/2 t cayenne
- 1/2 t black pepper
- 1/2 t garlic powder
Seared Red Chard

Make sure your greens are very dry before preparing recipe
- 2 tablespoons extra-virgin olive oil
- 1 small red onion, thinly sliced
- 10 to 12 cups red chard (2 bunches trimmed and coarsely chopped)
- Grated nutmeg, to your taste
- Coarse salt and pepper
- 2 tablespoons red wine or cider vinegar
Pumpkin Bread

Beat eggs, add sugars, oil and pumpkin
- 4 eggs, well beaten
- 2 cup white sugar
- 2 cup pumpkin
- 1 1/2 cup Crisco oil
- 3 cup flour
- 1 tsp salt
- 1 tsp baking powder
- 2 tsp baking soda
- 2 tsp cinnamon
- 1 cup coarse cut walnuts or pecans
Potato Salad, Peruvian

Gold and Sweet Winter Potato Salad with Green and Red Chilies
- 1 1/2-2 Limes (juice) (approx 2 Tbsp)
- 1 clove of garlic, minced
- 1 medium red onioin, diced
- 2 red chili peppers, seeded and minced (fresh, med. hot to hot: Cayenne, Hot Banana, Cubanelle)
- 2-4 green chili peppers, seeded and minced (fresh, med. hot to hot: Jalapeno or serrano)
- 1 cup fresh coriander coarsely chopped
- 1/3-1/2 Cup Olive Oil, Extra Virgin
- 5 medium Yukon Gold potatoes, peeled and boiled and cut into 1/2" dice
- 2 Large Sweet potatoes or yams, boiled until barely tender peeled and diced large
- Salt and fresh ground pepper to taste
Zucchini Boats Stuffed with Potatoes, Cheddar and Tomato

- 2 zucchini
- 4 to 5 small potatoes (about 1 1/2 cups diced)
- Salt and fresh ground pepper, to taste
- 1 1/2 tablespoons olive oil
- 1 Roma tomato, diced small
- 1 tablespoon chopped Italian parsley
- 1/2 cup grated cheddar cheese
