Frittata with Tomatoes, Onions and Basil

Sweat the onions in the oil until just browning
- 6 medium onions, thinly sliced
- 6 tablespoons olive oil
- 8 ounces plum tomatoes
- Salt
- Black pepper, freshly ground
- 6 eggs
- 2 tablespoons freshly grated Parmesan
- A handful of fresh basil
- 2 ounces butter

- 1 bag (10 oz.) marshmallows
- 3 tablespoons butter
- Red food coloring
- 6 cups crispy-rice cereal

Louki Raita (Zucchini in Creamy Yogurt)

Grate zucchini on largest holes of a four-sided grater
- 3 medium zucchini
- 1 1/2 cups plain whole-milk yogurt (preferably Middle Eastern)
- 1/2 cup packed fresh mint leaves
- 1/4 cup packed fresh coriander sprigs
- 1 teaspoon fresh lime juice, or to taste
- 3/4 teaspoon ground cumin
- 1/4 teaspoon salt
- 2 tablespoons whole milk, if necessary
Buttermilk Waffles

Whisk together flour, baking powder, salt and baking soda
- 2 1/4 c. all-purpose flour
- 1 tsp. baking powder
- 1 tsp. salt
- 1 tsp. baking soda
- 2 eggs, beaten
- 2 c. buttermilk
- 1/2 tsp. vanilla (optional)
- 8 Tbsp. butter, melted
- 1/4 tsp. lemon oil or 1 tsp. grated lemon rind (optional)
- 1/2 cup frozen or fresh blueberries (optional)

Italian Meat Loaf - Slow Cooker

Reverse 1/3 cup tomato sauce; set aside in refrigerator
- 1 (8-ounce) can tomato sauce, divided
- 1 egg, lightly beaten
- 1/2 cup chopped onion
- 1/2 cup chopped green bell pepper
- 1/3 cup dry seasoned bread crumbs
- 2 tablespoons grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1 pound ground beef
- 1/2 pound ground pork or veal
- 1 cup shredded Asiago cheese
Bran and Whole Wheat Buttermilk Waffles

Combine flours, baking soda, baking powder, and salt in a mixing bowl
- 3 lg. eggs, separated (use only 1 yolk)
- 1 cup unbleached white flour
- 1/2 cup bran (combination of wheat/oat may be used)
- 1/4 cup whole wheat flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 1/2 cup buttermilk
- 2 tablespoons Land O' Lakes Butter with Olive Oil
Vanilla Ice Cream

Beat yolks and sugar until blended
- 5 egg yolks
- 2/3 cups sugar
- 1 cup half and half
- 2 tablespoons butter
- 1 cup whipping cream
- 2 teaspoons vanilla extract
Ultimate Rum Punch

Combine all ingredients in a pitcher
- 3/4 cup golden or amber rum
- 1/2 cup coconut rum
- 1/4 cup apricot brandy
- 1 cup pineapple juice
- 3/4 cup orange juice
- 1/4 cup pink grapefruit juice
- Garnish: Limes, sliced
Mint Juleps for Derby Day

Syrup: On the night before serving, bring water and sugar to a boil
- Minted Simple Syrup:
- 1 cup cold "branch water"
- 2 cups sugar
- 6 healthy stalks of mint, fresh from the garden
- Mint Julep:
- Crushed Ice
- 2 jiggers Kentucky 100 Proof Sour Mash Bourbon
- 1 jigger minted simple syrup
- Cutting of fresh mint, rinsed
