Shrimp Scampi

- 1 pound pasta, or 3 cups cooked rice
- Coarse salt
- 2 tablespoons extra-virgin olive oil, plus more for drizzling
- 2 pounds large shrimp, peeled and deveined
- Freshly ground black pepper
- 5 garlic cloves, minced
- 1/2 teaspoon crushed red pepper flakes, plus more for garnish
- 1 1/2 tablespoons freshly grated lemon zest
- 1/4 cup white wine
- Juice of 1 lemon
- 1/4 cup chopped fresh parsley leaves
Asparagus and Ricotta Stuffed Chicken

Preheat the oven to 350 degrees F
- 3/4 cup ricotta
- 1/4 cup finely grated Parmesan
- 4 teaspoons finely grated lemon zest
- Four 8-ounce boneless, skinless chicken breasts
- Kosher salt and freshly ground black pepper
- 12 stalks thin asparagus
- 1 1/2 tablespoons olive oil
- 1/2 cup low-sodium chicken broth
- 1 tablespoon Dijon mustard

1. Preheat oven to 350 degrees, with rack in lowest position
- 1 tablespoon butter
- 1 leek (white and light green parts only), halved and thinly sliced, then well washed
- Coarse salt and ground pepper
- 1 bunch (1 pound) asparagus, tough ends removed, thinly sliced on the diagonal
- 4 large eggs
- 1 1/4 cups half-and-half
- Ground nutmeg
