Brick Chicken with Apricot Couscous

Toast cumin, coriander and cinnamon in a medium saucepan over low heat until fragrant
- 2 tablespoons cumin seed
- 2 tablespoons whole coriander
- 2 cinnamon sticks
- 1 teaspoon sweet paprika
- 1 teaspoon cayenne
- 1 teaspoon kosher salt
- 1/4 cup olive oil
- 1 lemon, juiced
- 1 whole free-range chicken (3 pounds), split (see directions below or have butcher split chicken for you)
- Extra-virgin olive oil
- Mint Yogurt Dressing. recipe follows
- Apricot Couscous, recipe follows
- 1 1/2 cups plain yogurt
- 1/2 bunch chopped fresh cilantro leaves
- 1/2 bunch fresh mint leaves
- 2 green onions, green parts only
- 2 tablespoons honey
- 1 lemon, juiced
- Extra-virgin olive oil
- Salt and pepper
- Extra-virgin olive oil
- 1 small red onion, small dice
- 1/4 cup dried apricots, coarsely chopped
- 1/4 cup whole almonds toasted, coarsely chopped
- 1 cup couscous
- 1 1/2 cups chicken stock, warm
- 1/2 teaspoon lemon zest
- 2 scallions green parts only
- 1/4 cup fresh mint leaves, roughly chopped
- 1/2 bunch fresh cilantro leaves, roughly chopped plus leaves for garnish
- Kosher salt and freshly ground black pepper
Strawberry Lettuce Salad

Tear the lettuce into bite-size pieces and add to a salad bowl
- Dressing:
- 1 head red leaf lettuce (can add butter leaf or spinach if desired)
- 1 small red onion, diced or sliced thinly
- 2 pints fresh strawberies
- 1 C slivered or sliced almonds, toasted
- 1 C mayonnaise
- 1/3 C sugar
- 1/4 C raspberry vinegar
- 1/4 C milk
- 1 - 2 T raspberry jam
- 1 T poppy seeds
My Favorite Zucchini Bread Recipe

Mix all ingredients together
- 3 eggs beaten
- 2 C sugar
- 1 C oil
- 2 C grated raw zucchini
- 1/2 C chopped walnuts
- 3 C flour
- 1 tsp. salt
- 1 tsp. baking soda
- 1 1/2 tsp. ground cinnamon
- 1/2 tsp. baking powder

Put 1 C sugar in heavy pan; stir at low heat until liquid turns golden brown
- 2 C sugar
- 3 1/2 C milk
- 6 eggs
- 1 tsp. vanilla
- 1 cinnamon stick

Cook the pasta in dutch oven while you stir fry the fresh vegetables in light oil
- Fresh cooked salmon or chicken chunks

Cinnamon Glazed Almonds

Red Snapper Vera Cruz

To prepare fish, prick with a fork and cover with lime juice
- 1 - 3 lb. red snapper, or similar white fish, filleted
- 3 T lime juice
- 6 T olive oil
- 1 medium onion
- 2 cloves garlic
- 2 # skinned, chopped tomatoes
- 1 bay leaf
- 1/2 tsp. oregano
- 1/2 C green olives, sliced or whole

- 2 Campari or other small vine-ripened tomatoes, diced
- 1/4 cup roughly chopped fresh cilantro
- 1 tablespoon unsalted butter
- 2 serrano chile peppers, thinly sliced into rounds
- 1 red jalapeno pepper, thinly sliced into rounds

- 1 tablespoon all-purpose flour
- 1 cup milk
- 1 cup grated pepper jack cheese (about 4 ounces)
