Carolina Pulled-Pork Sandwiches

Combine rub ingredients, or use your favorite store-bought rub
- Rub:
- You'll need a 5-pound natural bone-in pork shoulder
- and sandwich rolls
- 1/4 cup paprika
- 3 tablespoons ground black pepper
- 3 tablespoons kosher salt
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon celery seeds
- 1 tablespoon cayenne pepper
- Basting sauce:
- 1 cup cider vinegar
- 1 small onion, minced
- 1 teaspoon chili flakes
- 1 teaspoon kosher salt
- 1 tablespoon brown sugar
- 1 teaspoon ground black pepper
- Barbecue sauce:
- 2 cups cider vinegar
- 3 tablespoons molasses
- 3 tablespoons dark corn syrup
- 1/2 cup chili sauce
- 3 tablespoons brown sugar
- 4 teaspoons kosher salt
- 2 tablespoons hot sauce
- 2 teaspoons chili flakes, or more to taste
- 2 teaspoons ground black pepper

- 2 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup (2 sticks) unsalted butter, at room temperature
- 3/4 cup sugar
- 1 large egg
- 1 tablespoon grated lemon zest
- 1 teaspoon vanilla extract
- 1 teaspoon lemon extract

Italian Sausage Hoagies

Preparation 1. Preheat broiler to high
- 4 (2-ounce) hoagie rolls, halved lengthwise
- 9 ounces sweet turkey Italian sausage, cut into 1-inch-thick pieces
- 1/2 cup prechopped onion
- 1 teaspoon minced fresh garlic
- 1 cup lower-sodium marinara sauce (such as Amy's)
- 1 small red bell pepper, thinly sliced
- 1/4 teaspoon freshly ground black pepper
- 2.25 ounces shredded part-skim mozzarella cheese (about 1/2 cup)
Sauteed Green Beans with Shallot Crisps

- 1/3 cup cooking oil
- 5 - 6 shallots, thinly sliced (1/2 cup)
- 2 pounds green beans, trimmed
- 1 tablespoon butter
- 1 tablespoon olive oil
- Salt and freshly ground black pepper
Pecan Crispies

Cream shortening, butter, sugar and eggs together and beat well
- 1/2 C shortening
- 1/2 C butter
- 2 1/2 C brown sugar
- 2 beaten eggs
- 2 1/2 C flour
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1 C chopped pecans

- Cornmeal, for dusting
