New Orleans Onion Soup

Saute onions in butter to a light brown
- 5 T sweet butter
- 5 onions, sliced
- 3 T. Oil
- 1 # beef bones
- 1 clove garlic, minced
- 2 quarts of water
- 1/2 C dry white wine
- 8 rounds French bread
- 1 C grated Swiss cheese
- salt and pepper to taste
Thick Pork Chops with Spiced Apples and Raisins

Preheat the oven to 350 degrees F
- Pork Chops:
- 1 gallon water
- 1 cup brown sugar
- 1 cup sea salt
- 1 cup frozen apple juice concentrate, thawed
- 1 1/2 teaspoons whole black peppercorns
- 2 fresh thyme sprigs
- 4 double-cut bone-in loin pork chops, 1 pound each
- Sea salt and freshly ground black pepper
- Extra-virgin olive oil
- Spiced Apples and Raisins:
- 2 tablespoons unsalted butter
- 3 Granny Smith apples, peeled, cored, and sliced in 1/2-inch-thick wedges
- Leaves from 2 fresh thyme sprigs
- 1/4 cup raisins
- 3/4 cup frozen apple juice concentrate, thawed
- 3 tablespoons brown sugar
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- Pinch dry mustard
- Sea salt and freshly ground black pepper
- 1/2 lemon

Sausage-Apple Stuffing

Preheat the oven to 450 degrees F
- 1 stick unsalted butter, plus more for tasting
- 6 medium firm apples (such as Macoun or Braeburn), peeled and cut into large cubes
- 1 tablespoon honey
- 1 tablespoon red wine vinegar
- 12 slices white sandwich bread, cut into 1/2-inch cubes
- 1 pound spicy Italian sausage, casings removed, broken into bite-size pieces
- 10 sage leaves, cut into thin strips
- 2 tablespoons fresh thyme
- 1 teaspoon chopped fresh rosemary
- 4 leeks (white and light green parts only), halved lengthwise and thinly sliced crosswise
- 6 stalks celery, halved lengthwise and thinly sliced crosswise
- 1 pound small parsnips, peeled, quartered lengthwise and thinly sliced crosswise
- Kosher salt and freshly ground white pepper
- 1 cup low-sodium chicken stock

- Club Soda; apply then blot with clean cloth
- 1 part white vinegar and 1 part water in a spray bottle
- Shaving cream; apply, let set 30 minutes, blot away, and finish with vinegar mixture.
- Freeze gum with ice cubes, then ude a spoon to lift
- For grease, a drop or two of liquid dishwashing detergent (such as Joy) in a cup of water in a spray bottle
- For blood, apply hydrogen peroxide directly to the stain
- For pet stains, use organic cleaners, not chemical cleaners

- 2 boned, skinned chicken breast halves (1 lb. total)

- 2 tablespoons fresh lemon juice
- 1 tablespoon fresh oregano leaves

- 1 bunch asparagus, trimmed and cut in half lengthwise
- 4 ounces block feta cheese, broken into chunks

- 1 tablespoon chopped fresh flat-leaf parsley

- 1/4 teaspoon freshly ground black pepper

- 4 tablespoons extra-virgin olive oil
- 1 small onion, sliced (about 1 cup)
