- ■1 pkg (1 lb/500 g) lean ground turkey
- ■2 tsp (10 mL) canola oil
- ■1 onion, finely chopped
- ■1 green pepper, chopped
- ■4 cloves garlic, minced
- ■1 tbsp (15 mL) chili powder
- ■2 tsp (10 mL) dried oregano
- ■1 tsp (5 mL) ground cumin
- ■1 jalapeno pepper, seeded and minced
- ■1 can (28 oz/796 mL) diced tomatoes
- ■1 can (19 oz/540 mL) red kidney beans, drained and rinsed
- ■1/2 cup (125 mL) sodium reduced vegetable broth or water
- ■1/4 cup (60 mL) tomato paste
- ■2 bay leaves
Five Minute Fudge

Put butter, milk, sugar and salt in medium size saucepan over medium heat

- 2/3 cup evaporated milk
- 1 2/3 cups sugar
- 1/2 teaspoon salt

- 1/2 tablespoon Chinese cooking wine
- 1 1/2 tablespoons water
- 1 cup cornstarch
- LEMON SAUCE
- 4 tablespoons lemon juice
- 9 tablespoons water
- 1/4 teaspoon salt
- 3 tablespoons sugar, heaping
- 1/2 tablespoon vinegar
- dash sesame oil
- 1 teaspoon cornstarch
- 6 tablespoons vegetable oil, for frying chicken

Shrimp & Sweet Potato in Coconut Milk

This is a Kerala (a South Indian state) recipe called Konju Pulungari
- 500 gr shrimp, cleaned
- 150 gr sweet potato, cut into medium size cubes
- handful spinach, coarsely chopped
- 400 ml coconut milk
- 2 medium onion, thinly sliced
- 1 in. ginger, peeled and sliced
- 2 green chilies, halved lengthwise (you can remove seeds to reduce the spiciness)
- 10 curry leaves (optional)
- 1/2 teaspoon Turmeric powder
- 1/2 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1 teaspoon vinegar
- 200 ml water
- Salt to taste
- Oil for frying
Seafood Lasagne

1.Preheat oven to 350 degrees F (175 degrees C)
- 1 (16 ounce) package lasagna noodles
- 2 tablespoons olive oil
- 1 clovegarlic, minced
- 1 pound baby portobello mushrooms, sliced
- 2 (16 ounce) jars Alfredo-style pasta sauce
- 1 pound shrimp, peeled and deveined
- 1 pound bay scallops
- 1 pound imitation crabmeat, chopped
- 20 ounces ricotta cheese
- 1 egg
- black pepper
- 6 cups shredded Italian cheese blend
Green Chili & Chicken Chilaquiles

Preheat oven to 350F. Place tortilla strips in a roasting pan
- 12 stale tortillas, cut into strips
- 1 Tbsp. vegetable oil
- 1 small cooked chicken, meat removed & cut into bite size pieces
- 3 cups mozzarella (or Manchego) cheese, grated
- 2 cups chicken stock
- 1 cup fresh parmesan, grated

- 3 Tbsp. chopped cilantro

- 4 garlic cloves, finely chopped
- 1/4 tsp. cumin
- TO SERVE
- 1 1/2 cups sour cream
