Ginger Beef

Cover beef with water and baking soda and let stand for 15 minutes
- 1 pound sirloin steak, trimmed, cut into matchstick pieces
- 1/4 teaspoon baking soda
- 1/2 cup water
- SEASONING
- 2 teaspoons light soy sauce
- 1 teaspoon sugar
- 1 teaspoon cornstarch
- dash white pepper
- COATING
- 2 eggs
- 3 tablespoons cornstarch
- 1 cup fine dry breadcrumbs
- SAUCE
- 1 small carrot, julienned
- 2 ounces ginger, shredded
- 1/2 green pepper, julienned
- 1/2 cup water
- 1/2 cup sugar
- 2 tablespoons light soy sauce
- 2 tablespoons dark soy sauce
- dash Woh Hup (hot chili oil), optional
- 1/2 teaspoon salt
- 2 teaspoons cornstarch
- 2 tablespoons water
Leek and Potato Soup

Cook potatoes until tender
- 5 medium potatoes, chopped
- 2 teaspoons oil or butter
- 2 small leeks, thinly sliced
- 1 clove garlic, crushed
- 200 grams bacon pieces, finely chopped
- 6 cups chicken stock
- 1 bay leaf
- 2 sprigs parsley
- 1 cup milk
- 1/4 cup parsley, chopped
- salt and white pepper
- cheddar cheese, grated
One Pan Pesto Chicken

Set large pan over medium heat
- 2 tablespoons olive oil
- 3 skinless, boneless chicken breasts, cut into 2-inch pieces
- 1 medium red pepper, deseeded and sliced
- 5 medium zucchini, cut into ribbons or spirals
- 1 pint grape tomatoes, halved
- 1/4 cup pesto, homemade or store-bought
- mozzarella cheese, optional
Chicken Couscous Salad

Drain oranges, reserving liquid
- 1 can (284 mL)mandarin oranges, undrained
- 1 cup couscous, uncooked
- 4 cups baby spinach leaves
- 2 cups chopped cooked chicken breasts
- 1 zucchini, shredded
- 1 red pepper, cut into strips
- 1/3 cup Kraft Extra Virgin Olive Oil Raspberry Dressing
Fruit Salad Orange Dressing

Combine sugar & cornstarch
- 1/2 cup sugar
- 2 tsp. cornstarch
- 1 cup orange juice
Garlicky Chicken or Pork Souvlaki

Combine everything but chicken or pork, and whisk well
- 2 lbs chicken breasts or pork tenderloins, cut into 1-inch cubes
- 10 garlic cloves, crushed
- 1/4 cup olive oil
- 1/2 cup lemon juice, freshly squeezed is best
- 2 tablespoons oregano
- salt & fresh ground pepper, to taste (optional I don't usually add it)
Greek Yogurt Dip

Loaded with protein and veggies and FLAVOR, this stuff is so so good
- 1 cup plain non-fat Greek style yogurt
- 1 avocado, finely chopped
- 1/2 cup chopped tomatoes
- 1/2 cup cucumber, finely chopped
- 1 tsp dried dill
- 1/2 tsp garlic powder
- salt to taste
Methi Chicken

Methi chicken, a rich restaurant like chicken curry which goes well with roti, naan, or bhatura
- Chicken: 500 gms
- Chopped Methi leaves: 3/4 cup
- Onions: 2
- Cashewnuts: 2 tbsp (slighly chopped)
- Water: 1/4 cup
- Tomatoes: 2
- Ginger: 1 inch
- Garlic: 7-8 cloves
- Salt: 2 tsp or as needed
- Oil: 4-5 tbsp
- Onion: 1 sliced
- Green chilies: 2, slit
- Kashmiri Chilli powder: 2 tsp
- Garam Masala: 1/2 tsp
- Turmeric Powder: A fat pinch
- Sugar: 1/2 tsp (optional)
- Beaten Curd: 1 tbsp
- Cream: 3 tbsp
- Extra water to cook the chicken

- 1/4 to 1/2 cup olive oil
- 3 tablespoons lemon juice

- 1 tablespoon dried rosemary, crushed

- 3 lbs chicken pieces (I use breasts on the bone)
- 1/2 cup soy sauce
- 1/3 cup brown sugar
- 1 jar plum puree (a small baby food jar)
- 1/4 cup honey
- 1/4 cup orange juice
- 1 clove garlic, minced
- 1/4 teaspoon Chinese five spice powder
- paprika (for garnish)
