  • 6 ounces pork tenderloins
  • 1/8 teaspoon Chinese five spice powder
  • cooking spray
  • 1 1/2 teaspoons oil, divided
  • 1/2 teaspoon fennel seeds, crushed
  • 1/2 cup chopped fresh broccoli
  • 1/2 cup sliced fresh mushrooms
  • 1/4 cup chopped green onions
  • 1/4 cup shredded carrots
  • 1 1/2 cups hot cooked rice (w/o added salt or fat)
  • 1 tablespoon low sodium soy sauce
  • 1/8 teaspoon pepper

1.In a large tupperware container, whisk together all ingredients of meat marinade

  • 1 cup soy sauce
  • 18 oz. Coca-Cola {I used the mexican version made with cane sugar and would recommend to not use diet soda for this. Ever ever ever.}
  • 1/4 cup fresh lemon juice
  • 1/2 cup canola oil
  • 2 tablespoons Worcestershire Sauce
  • 3 cloves garlic, minced
  • 3 lbs of meat: I used ribeye steaks that I trimmed the extra fat from and cut up into cubes; tri tips would also be great!

  • 24 oz Seitan (rinsed and drained)
  • 1 8-oz. pkg. Cottage Cheese (low-fat (or ricotta))
  • 1 cup Panko Breadcrumbs (unseasoned )
  • 1 small Onion (finely chopped (1 cup))
  • 1 large Egg (lightly beaten)
  • 3 Tbs. Lemon Juice
  • 2 Tbs. Dill Weed (finely chopped fresh )
  • 2 Tbs. Parsley (finely chopped)
  • 2 tsp. Cumin
  • 1 tsp. Baking Soda
  • 1/2 tsp. Allspice
  • 1/4 tsp. Ground Cinnamon
  • 2 Tbs. Olive Oil
  • 1 25-oz. jar Tomato Sauce
  • 1 cup Feta Cheese (crumbled optional)

1.Add chicken pieces, red peppers, potatoes, and onions to the slow cooker

  • 3 boneless skinless chicken breasts, pounded thin and chopped into bite-size pieces

  • 1/2 white or yellow onion, chopped
  • SAUCE
  • 2 cups chicken broth
  • 2 cups unsweetened coconut milk (or one 14-ounce can + 1/2 cup chicken broth)
  • 3 tablespoons yellow curry powder (see note)
  • 1 teaspoon cumin
  • 1 teaspoon of salt (or to taste)
  • 1/2 teaspoon cayenne pepper (or to taste)

  • cashews, cilantro, cooked rice for serving
