Pork Fried Rice
By Hester
Trim fat from pork; cut pork into 1/4 inch cubes
- 6 ounces pork tenderloins
- 1/8 teaspoon Chinese five spice powder
- cooking spray
- 1 1/2 teaspoons oil, divided
- 1/2 teaspoon fennel seeds, crushed
- 1/2 cup chopped fresh broccoli
- 1/2 cup sliced fresh mushrooms
- 1/4 cup chopped green onions
- 1/4 cup shredded carrots
- 1 1/2 cups hot cooked rice (w/o added salt or fat)
- 1 tablespoon low sodium soy sauce
- 1/8 teaspoon pepper
The Best Steak Marinade

1.In a large tupperware container, whisk together all ingredients of meat marinade
- 1 cup soy sauce
- 18 oz. Coca-Cola {I used the mexican version made with cane sugar and would recommend to not use diet soda for this. Ever ever ever.}
- 1/4 cup fresh lemon juice
- 1/2 cup canola oil
- 2 tablespoons Worcestershire Sauce
- 3 cloves garlic, minced
- 3 lbs of meat: I used ribeye steaks that I trimmed the extra fat from and cut up into cubes; tri tips would also be great!
Lemongrass Chicken

Mix all ingredients together
- 1 T ginger, minced
- 1 T garlic, minced
- 1 T lemongrass, minced
- 1 T brown sugar
- 1/2 t salt
- 1/2 C Hoisin Sauce
- 1 C onion, chopped
- 16 oz chicken breast, thinly sliced
Veg Greek Meatballs in a Fragrant Tomato Sauce with Feta Cheese

Seitan and cottage cheese get blended together for veg meatballs that will fool even diehard omnivores
- 24 oz Seitan (rinsed and drained)
- 1 8-oz. pkg. Cottage Cheese (low-fat (or ricotta))
- 1 cup Panko Breadcrumbs (unseasoned )
- 1 small Onion (finely chopped (1 cup))
- 1 large Egg (lightly beaten)
- 3 Tbs. Lemon Juice
- 2 Tbs. Dill Weed (finely chopped fresh )
- 2 Tbs. Parsley (finely chopped)
- 2 tsp. Cumin
- 1 tsp. Baking Soda
- 1/2 tsp. Allspice
- 1/4 tsp. Ground Cinnamon
- 2 Tbs. Olive Oil
- 1 25-oz. jar Tomato Sauce
- 1 cup Feta Cheese (crumbled optional)
Slow Cooker Coconut Curry Cashew Chicken

1.Add chicken pieces, red peppers, potatoes, and onions to the slow cooker
- 3 boneless skinless chicken breasts, pounded thin and chopped into bite-size pieces
- 1 red pepper, seeded and thinly sliced
- 2 small potatoes (I used red), peeled and chopped
- 1/2 white or yellow onion, chopped
- SAUCE
- 2 cups chicken broth
- 2 cups unsweetened coconut milk (or one 14-ounce can + 1/2 cup chicken broth)
- 3 tablespoons yellow curry powder (see note)
- 1 teaspoon cumin
- 1 teaspoon of salt (or to taste)
- 1/2 teaspoon cayenne pepper (or to taste)
- optional: corn starch slurry (see note)
- cashews, cilantro, cooked rice for serving

- 3 lbs 12 oz Icing Sugar
- 1/2 oz cream of tartar
Mimi's Ribs & Kraut

- 3 lbs spare ribs
- 2 big cans saurekraut
- 1 coil polish sausage sliced
- 1 tsp. salt

Mediterranean Orzo Salad with Feta Vinaigrette

- 1 cup uncooked orzo (rice-shaped pasta; about 8 ounces)
- 2 cups bagged prewashed baby spinach, chopped
- 1/2 cup chopped drained oil-packed sun-dried tomato halves

- 3 tablespoons chopped pitted kalamata olives
- 1/2 teaspoon freshly ground black pepper

- 1/4 cup liquid honey
- 2 Tbsp cider vinegar
- 2 Tbsp grainy Dijon mustard
- 1 tsp minced garlic
- 1 tsp Herbes de Provence
- 1/4 tsp. each salt & pepper

- Apple Filling:
- 2-1/4 cups (550 mL) all-purpose flour
- 1 cup (250 mL) granulated sugar
- 2-1/2 tsp (10 mL) baking powder
- 1/4 tsp (1 mL) cinnamon
- 1/4 tsp (1 mL) salt
- 1 cup (250 mL) milk
- 1/2 cup (125 mL) sour cream
- 2 eggs
- 1/2 cup (125 mL) unsalted butter, melted
- 1/2 tsp (2 mL) vanilla
- 2-3/4 cups (675 mL) thinly sliced cored peeled Granny Smith apples, (2 or 3)
