Shaee Paneer

Paneer cubes cooked in thick onion gravy with ground cashews, cream and fenugreek leaves
- 1/2 cup butter
- 1 large onion
- 3-4 garlic cloves
- small piece of ginger
- 2 large tomatoes, chopped
- chopped almonds or cashews
- 2 Tbsp. canola oil
- 400 grams paneer
- 1/2 cup whipped cream & water
- 1/2 Tbsp. sugar
- chopped nuts for garnish
- 2 tsp. salt
- 2 tsp. red chili powder
- 1 tsp. cumin seeds
- 1/2 tsp. fenugreek leaves
- 2 bay leaves
- 2-3 green cardomom
- 2-3 cloves
- 1/2 tsp. garam masala
- 1/2 tsp. black pepper
- 1 tsp. turmeric
- 1/2 tsp. coriander powder
- 1/2 tsp. cumin powder
Cabbage Rolls in Sour Cream Tomato Sauce

This recipe comes from my mother with a few revisions
- 2 large sour cabbage
- 3 lbs lean ground beef
- 1 egg
- 2 tablespoons Worcestershire sauce
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 cup uncooked rice
- 1 1/2 cups uncooked small shell pasta (orzo "or" acini de pepe)
- 3/4 cup water
- 2 medium onions
- 1 Tbsp. canola oil
- 2 cans plain spaghetti sauce (not chunky)
- 1 (500 g) container sour cream (use plain yogurt for low-fat equivalent)
Tomato, Mozzarella and Bean Salad

Place all ingredients in a large bow and mix well
- 11 can (19oz) no salt chickpeas, drained and rinsed
- 2 cups halved grape tomatoes
- 1 cup mini fresh mozzarella balls, halved (4oz)
- 1/3 cup minced red onion
- 1/3 chopped fresh basil leaves
- 1 Tbsp. olive oil
- 1 Tbsp. balsamic vinegar
- 1 Tbsp. lemon juice
- 1/2 tsp. salt
- 1/4 tsp. black pepper
Pepperoni Mac ’n’ Cheese Muffins

Preheat the oven to 400 degrees F
- 1/2 cup shredded parmesan cheese
- 50 pepperoni slices
- 1/4 cup grated parmesan cheese
- 1/2 pound small elbow macaroni - cooked and drained
- 1/2 stick (1/4 cup) unsalted butter
- 2 1/2 tablespoons all-purpose flour
- 3/4 cup milk
- 3/4 tablespoon Worcestershire sauce
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/8 teaspoon nutmeg
- 2 cups 3-cheese blend (mozzarella, Monterey jack, cheddar cheese)
Vietnamese Peanut and Hoisin Dressing

A sweet, sour and garlicky peanut and hoisin dipping sauce
- 1 teaspoon oil
- 2 cloves garlic, chopped
- 1/4 cup peanut butter
- 2 tablespoons hoisin sauce
- 1/2 cup water
- 1 teaspoon fish sauce
- 1 teaspoon brown sugar
- 2 tablespoons lime juice (~ 1 lime)
- 1 birds eye chili, sliced (or 1 teaspoon chili sauce)

- 3 tablespoons canola oil

- 5 radishes, sliced (about 1 cup)
