Curried Cauliflower Salad

CURRIED CASHEWS Heat oven to 350F
- CURRIED CASHEWS
- 2 cups cashews
- 1 Tbsp. maple syrup
- 3/4 tsp. curry powder
- pinch salt
- CURRIED CAULIFLOWER
- 1/4 extra virgin olive oil
- 2 Tbsp. curry powder
- 1 tsp. salt
- 1/4 tsp. cumin, ground
- 1/4 tsp. coriander, ground
- pinch dry mustard
- 2 Tbsp. ginger, 1/2 ounce, peeled and julienned
- 8 cups cauliflower florets
- CURRIED SALAD
- 3 Tbsp. honey
- 1 1/2 tsps lemon juice
- 1 1/2 tsp. olive oil
- 8 cups curried cauliflower
- 1 cup green peas
- 1/2 cup sweet red bell pepper, diced
- 1/4 cup dried apricots, diced
- 1/2 cup curried cashews
- 3/4 tsp. salt

- 2 cups cold milk

Crisp Guacamole Rolls

Guacamole: 1. Coarsely mash the avocados, keep it chunky
- Guacamole:
- 2 ripe avocados (not super soft, just forgiving)
- 1 large garlic clove minced
- 2 shallots finely diced
- 2 large Roma tomatoes, diced fine (squeeze them to rid the juice)
- Juice of 1/2 fresh lemon or lime
- Good dash of Worcestershire sauce
- Splash of your favourite hot sauce to taste
- 1/2 cup chopped fresh cilantro
- Sea salt to taste
- Sour cream for dipping
- Your favourite salsa for dipping
- 8 flour tortillas (8 inch)
- Grapeseed oil

Glazed Pork Medallions

Cut pork into 1-in. slices and flatten to 1/4-in
- 1 pork tenderloin (1-1/4 pounds)
- 1/4 teaspoon salt
- 1/3 cup reduced-sugar orange marmalade

Shrimp Creole

In a large skillet heat the olive oil over medium heat
- 2 Tbsp. butter
- 1/2 cup celery, chopped
- 1/2 cup onion, chopped
- 1/2 cup green pepper, chopped
- 1/4 teaspoon of cayenne pepper
- 1/4 tsp. Cajun Seasoning (more or less to taste)
- 1 bay leaf
- 1 lb. of large shrimp, peeled and deveined
- 2 tsp. Worcestershire sauce
- 14 oz. can diced tomatoes
- 10 oz. frozen, uncooked, peeled shrimp
- 3 cups rice, cooked
Armenian Rice Pilaf

Heat butter in 2qt saucepan until frothy
- Add one or more of the following ingredients:
- 4 tablespoons butter
- 1/3 cup orzo
- 1 cup rice
- 2 1/2 cups chicken broth
- 1/4 cup minced onions
- 1/2 teaspoon minced garlic or garlic powder
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1 teaspoon dried parsley
- 1/4 lb. broccoli florets
- 5 ounces frozen peas
- 1 can sliced mushrooms
- 1/2 cup sliced fresh mushrooms
- 2 Tablespoons sliced green onion
- 1/2 cup cashews, almonds or pecans
- 2 Tablespoons Parmesan cheese
- 4 slices bacon cooked and chopped
Quinoa Mexican 6 Layer Dip
