Mesclun Salad with Cucumber and Feta

- 1 whole wheatpita bread, cut in half

Chilaquiles

Mexican chilaquiles, strips of fried corn tortillas simmered in salsa, and served with cheese, eggs, or beans
- 1 dozen corn tortillas, preferably stale, or left out overnight to dry out a bit, quartered or cut into 6 wedges
- Corn oil
- Salt
- 1 1/2 to 2 cups red chile sauce or salsa verde*
- GARNISHES
- Cotija cheese or queso fresco
- Crema Mexicana or creme fraiche
- Cilantro, chopped
- Chopped red onion
- Avocado, sliced or roughly chopped
Curried Potato Pasties

These are delicious warm with salad and chutney or cold, in packed lunches
- 300 g potatoes, peeled and cut into small chunks
- 100 g frozen peas
- 2 tsp oil
- 1 onion, sliced
- 1-2 tsp curry paste (any type)
- 1 tsp black mustard seeds
- juice 1/2 lemon
- handful coriander, chopped
- 375 g pack ready-rolled puff pastry
- 1 egg, beaten
Doghouse Chocolate Cake

- Dry ingredients ~ mix together:
- 2 cups sugar
- 3/4 cups cocoa
- 1 1/4 cups flour
- 1 1/2 tsp. baking powder
- 1 1/2 tsp. baking soda
- 1 tsp. salt
- Wet ingredients ~ mix together in separate bowl:
- 2 eggs
- 1 cup milk
- 1/2 cup vegetable oil
- 2 tsp. vanilla
- 1 cup boiling water
- Icing
- Mix together:
- 2/3 cups cocoa
- 2 cups icing sugar
- Blend in:
- 1/2 cup melted butter
- 1/3 cup milk
- 1 tsp vanilla
Fire Roasted Tomato Soup

In 3-quart saucepan, melt butter over medium heat
- 1 tablespoon butter or olive oil
- 1 large onion, chopped (1 cup)
- 2 cloves garlic, finely chopped
- 2 cans (14.5 oz each) Muir Glen® organic fire roasted diced tomatoes, undrained
- 1 3/4 cups Progresso® reduced-sodium chicken broth (from 32-oz carton) or 1 can (14 oz) vegetable broth
- 2 tablespoons chopped fresh basil leaves, cilantro leaves or Italian (flat-leaf) parsley
- 1 teaspoon sugar
- 1/4 teaspoon crushed red pepper flakes
- 1/2 cup whipping cream
