Crab Cakes, Peppercorn's

Drain the liquid from the crabmeat and place in a mixing bowl
- 2 1/2 pounds fresh Maine crabmeat
- 1/2 onion, chopped
- 1 carrot, peeled and sliced
- 2 stalks celery, chopped
- 3 tablespoons Old Bay seasoning
- 4 tablespoons fresh lemon juice
- 3 squirts Tabasco sauce
- 3 squirts Worcestershire sauce
- 1 1/2 cups bread crumbs
- 2 eggs, lightly beaten
- 1/2 cup heavy cream
- Flour as needed
- Butter, for sautéing

- 1 quart water
- 2 tomatoes, chopped
- 3 cloves garlic, diced
- 1/2 onion, sliced fine
- 1 ounce dried lim beans, cooked (or canned)
- 1 carrot, peeled and cut in 1/8-inch rounds
- 1 stalk celery, diced
- 1/4 head green cabbage, sliced fine
- Bouquet Garni (thyme, bay leaf, and parsley, wrapped in cheesecloth)
- 1 live lobster
- Salt and cayenne pepper to taste

- 1 tablespoon olive oil
- 2 tablespoons butter
- 6 onions, thinly sliced
- salt and pepper to taste
- 2 tablespoons fresh thyme, chopped

- 1/2 cup sherry

- 2 dozen small clams
- 1 quart, plus 1 cup water
- 2 garlic cloves, smashed
- 2 bay leaves
- 3 tablespoons butter
- 3 ounces pancetta, cut into cubes
- 1 stalk celery, diced
- 1 onion, diced
- 10 sprigs (leaves) thyme
- 1 cup King Arthur flour
- 2 Yukon Gold potatoes, peeled and cubed
- 1/2 cup heavy cream
- 1 cup milk
- 1 pinch ground pepper
- 1 bunch chives, minced
Shrimp, Baked Stuffed

- ! pound jumbo shrimp, butterflied and rinsed
- 1 egg, lightly beaten
- 6 ounces lump crabmeat
- 2 tablespoons heavy cream
- 1/2 teaspoon dry mustard
- 1/2 teaspoon salt
- 6 tablespoons butter
- 1/4 cup red bell pepper, finely chopped

- 32 tablespoons mayonnaise
- 1/4 cup crushed
- ritz crackers
- 2 tablespoons fresh parsley, chopped
- juice from 1/2 lemon
- salt and pepper to taste
- 1 tablespoon butter, for sauteing
- 1 tablespoon olive oil, for sauteing

- 4 tablespoons butter
- 3/4 pound sausage or kielbasa, thinly sliced

- 1/4 cup King Arthur flour
- 2 cups milk

- 1/2 teaspoon caraway seeds
- 1 teaspoon white pepper
- 3 cups Swiss cheese, shredded
