Awesome flavorful dinner
- Dry Rub:
- 2 tablespoons light brown sugar
- 1 tablespoon ancho chile powder
- 1 tablespoon paprika
- 2 teaspoons kosher salt
- 2 teaspoons freshly ground black pepper
- 1 teaspoon cayenne pepper
- 1 teaspoon granulated garlic
- 1 teaspoon English mustard powder
- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground cumin
- Steak and Salsa:
- 2 tablespoons olive oil, plus more for grill
- 3 ears of corn, shucked
- 1/4 red onion, finely chopped
- 1 jalapeño, seeds removed, finely chopped
- 1 pint cherry tomatoes, halved
- 1 cup fresh cilantro, coarsely chopped
- 1/3 cup fresh lime juice
- Kosher salt, freshly ground pepper
- 1 1/2 pound flank steak
Chicken with Goat Cheese & Tomatoes

Preheat overn to 350 degrees
- Four 4-oz trimmed boneless skinless chicken breasts
- 1/2 C Canned, drained diced fire-roasted tomatoes or fire-roasted tomatoes with garlic
- 2 oz (1/2 c) goat cheese crumbles
- 2 Tbs. Finely chopped basil leaves
Sweet Potato Peach Cashew Bake

Combine brown sugar, cashews, salt and ginger
- 1 cup backed brown sugar
- 1/3 cup broken cashews
- 1/2 tsp salt
- 1/4 tsp ground ginger
- 2 pounds sweet potatoes
- 8 oz can peach slices, well drained

- 1 Bottle Heintz Chili Sauce
- 1 Cup Grape Jelly

Cobbler - Chocolate-Pecan

- 1 3/4 c. sugar, divided
- 1 c. self-rising flour
- 5 1/2 T. unsweetened cocoa powder, divided
- 1/2 c. whole milk
- 1 t. vanilla extract
- 1/2 c. chopped pecans
- 1/2 c. toffee bits
- 1 1/2 c. boiling water
- Garnish: vanilla ice cream, chopped pecans.

1 Mix sauce and put all other ingredients, except eggs
- 3 cups cooked chicken (6-7 pounds)
- 4 boiled eggs, sliced
- 1 cup chopped celery
- 1 medium onion
- 1 can water chestnuts
- 1 can cream of chicken soup
- 3 tbs lemon juice
- 3/4 cup Miracle Whip

Baked Penne with Roasted Vegetables

1 Preheat the oven to 450 degrees F
- 2 red peppers, cored and cut into 1-inch wide strips
- 2 zucchini, quartered lengthwise and cut into 1-inch cubes
- 2 summer squash, quartered lengthwise and cut into 1-inch cubes
- 4 cremini mushrooms, halved
- 1 yellow onion, peeled and sliced into 1-inch strips
- 1/4 cup extra-virgin olive oil
- 1 tsp salt, divided
- 1 tsp freshly ground black pepper, divided
- 1 Tbs dried Italian herb mix or herbs de Provence
- 1 pound penne pasta
- 3 cups marinara sauce (store bought or home made)
- 1 cup grated fontina cheese
- 1/2 cup grated smoked mozzarella
- 1 1/2 cups cups frozen peas, thawed
- 1/4 cup grated Parmesan, plus 1/3 cup for topping
