Pomengranate Margarita's

Pour the tequila and triple sec into a pitcher
- Ice
- 1/2 cup white tequila
- 1/4 cup Triple Sec
- 1/2 cup pomegranate juice
- 1 lime, juiced
- Club soda (optional)
Beef Stroganoff

Roll beef in ¼ cup, salt & pepper mixture
- 11/2 lbs sirloin, cut into strips
- 1/4 cup flour
- 1 tsp. salt
- 1/4 pepper
- 1 medium onion, chopped
- 1 clove garlic, minced (or 1/4 tsp garlic powder)
- 3 TB oil
- 2 TB flour
- 1 cup beef boullion
- 1 TB worcestershire sauce
- 3/4 cup sour cream
Old-Fashioned Oatmeal Honey Apple Cake

Preheat oven to 350°. 2
- Cake:
- 1 cup quick-cooking oats
- 1 cup hot water
- 1 1/2 cups all-purpose flour (about 6 3/4 ounces)
- 2 teaspoons ground cinnamon
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/3 cups packed light brown sugar
- 3/4 cup chunky applesauce
- 1/3 cup honey
- 2 large eggs
- Cooking spray
- Frosting:
- 1/4 cup butter
- 1/3 cup packed light brown sugar
- 1/4 cup honey
- 1/2 cup coarsely chopped almonds, toasted
Easy Parmesan "Risotto" (Barefoot Contessa)

Preheat the oven to 350 degrees
- 1 1/2 cups Arborio rice
- 5 cups simmering chicken stock, preferably homemade, divided
- 1 cup freshly grated Parmesan cheese
- 1/2 cup dry white wine
- 3 tablespoons unsalted butter, diced
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 1 cup frozen peas

- 1/8 tsp. salt
- 1/4 cup margarine
- 1/2 cup flour

Taco Stomboli

These are a great alternative to pizza on a Friday/Saturday night
- Taco Stromboli:
- 2 cans Pillsbury Pizza Dough (Thin Crust)
- 1 lb lean ground beef or turkey
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 can Rotel diced tomato & peppers (I like "original" but choose "mild" for less spicy version)
- Slices of Jalapeno Monterey Jack Cheese
- 8 oz shredded Mexican cheese
- 4 oz. pickled jalapeno slices, chopped (optional)

Taco Salad

Great summer salad!
- 10 oz Bag of Romaine Lettuce
- 1/4 cup of Light Ranch Dressing
- 1 Packet of Taco Seasoning (reserve 1 tsp for dressing)
- 1/2 lb. of lean Ground Beef
- (4) Green onions
- 1 cup of corn (frozen & thawed)
- 1/2 cup of red pepper - chopped (optional)
- 1 avocado - chopped (optional)
- Cilantro - chopped (optional)
- Handful of Fritos - crushed
Lime Mojitos (Paula Deen)

In a large pitcher, combine ice, sliced limes, and mint
- 4 cups crushed ice
- 3 limes, thinly sliced
- 1/2 cup fresh mint leaves
- 1 (12 oz) container frozen limeade concentrate, thawed
- 3/4 cup fresh lime juice
- 1/2 cup vodka
- 1/2 cup lime vodka
- 8 cups lemon-lime soda (such as sprite)

- 4 TB Sherry or Red Wine Vinegar
- 2 tsp agave nectar
- 1 teaspoon Dijon mustard
- 1/4 teaspoon freshly ground black pepper

- 3 TB extra-virgin olive oil
- 1/3 cup thinly vertically sliced red onion

- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3 tablespoons sugar
- 2 large eggs, lightly beaten
- 3 cups buttermilk
- 4 tablespoons unsalted butter, melted, plus 1/2 teaspoon for griddle
- 1 cup fresh blueberries (optional)
