Carne Asada with Roasted Tomato Salsa

Beef & Marinade: Combine all ingredients in a large bowl and whisk to combine
- For Marinade:
- vegetable oil
- red wine vinegar (can substitute with white vinegar)
- lime juice
- water
- fresh garlic - crushed
- ground cumin
- chili powder
- Mexican oregano
- cilantro, chopped (no stems)
- salt & pepper
- 1 lb steak
- Roasted Tomato Salsa:
- 6 Roma Tomatoes
- 1 onion, diced
- 2 cloves garlic, minced
- 2 chipotle peppers
- cilantro, chopped

- To coat ramekins:
- 7 oz. semi-sweet chocolate
- 1 oz. butter
- 5 eggs
- 5 oz. powdered sugar
- 2 oz cake flour
- Melted butter
- Cocoa powder
- Flour
- Brush melted butter into ramekins. Combine cocoa powder and flour and coat over melted butter.
Grilled Pimento Cheese Sandwiches (Cooks Country)

1. Combine cheeses, mayonnaise, pimentos, onion, Tabasco, and pepper in a bowl
- 1 1/3 cups grated cheddar cheese
- 2/3 cup grated Monterey Jack cheese
- 2 tablespoons mayonnaise
- 2 tablespoons jarred pimentos , drained and chopped
- 2 teaspoons minced onion (yellow)
- 1/2 teaspoon Tabasco sauce
- 1/4 teaspoon ground black pepper
- 8 slices hearty white sandwich bread
- 4 tablespoons unsalted butter , melted
- 8 very thin slices tomato
- Tip: Press the tomato slices between paper towels to remove moisture.
French Toast Souffle

Place bread cubes in a lightly greased 9x13 inch baking pan
- 10 cups white bread cubes
- 1 (8 ounce) package lowfat cream cheese, softened
- 8 eggs
- 1 1/2 cups fat-free or reduced fat milk
- 2/3 cup half-and-half cream
- 1/2 cup maple syrup
- 1/2 teaspoon vanilla extract
- 2 tablespoons confectioners' sugar
