Thai Red Curry Mussels

Place white wine, lemongrass and lime leaves into pot
- 1/2 cup white wine
- 1 stalk lemongrass, crushed
- 4 lime leaves
- 1 can coconut milk
- 3 TB red curry paste
- 2 TB fish sauce
- 2 TB lime juice
- 2-3lbs mussels
- 1/4 cup cilantro leaves
- 1/2 cup Thai Basil

Antipasto Pasta Salad (Cooks Country)

1. Place one paper towel on microwave-safe plate
- 8 ounces sliced pepperoni , cut into 1/4-inch strips
- 8 ounces soppressata or salami, halved and cut into 1/4-inch strips
- 10 tablespoons red wine vinegar
- 6 tablespoons extra virgin olive oil
- 3 tablespoons mayonnaise
- 1 jar pepperoncini (12-ounce), drained, (2 tablespoons juice reserved), stemmed, and chopped coarse
- 4 garlic cloves , minced
- 1/4 teaspoon red pepper flakes
- Salt and pepper
- 1 pound fusilli or campanelle
- 1 cup shredded provolone cheese , aged
- 12 ounces roasted red peppers , drained, patted dry, and chopped coarse
- Optional - 1 cup chopped, pitted kalamata olives
- Optional - 1 cup jarred artichokes, drained and quartered. 1 cup chopped fresh basil

1. Fill a Dutch oven two-thirds full of water; bring to a boil
- 2 pounds skinless, boneless chicken breast halves
- 1/2 cup light mayonnaise
- 1/2 cup plain fat-free Greek yogurt
- 1 tablespoon fresh lemon juice
- 1 tablespoon white wine vinegar
- 1 tablespoon Dijon mustard
- 1 teaspoon honey
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/3 cup chopped celery
- 1/3 cup sweetened dried cranberries
- 7 tablespoons (about 2 ounces) coarsely chopped smoked almonds

- 1 pound brussels sprouts, trimmed and halved lengthwise

- 8-10 oz Buffalo Chicken Wing Sauce
- 2-3 TBsp Ranch dressing
- 1 oz crumbly bleu cheese
- 1 cup whole milk ricotta cheese
- 2 oz. light cream cheese
- 1 egg
- Bleu Cheese Sauce-
- 2 green onions, sliced thin
- 2 TBsp butter
- 16 oz half & half
- 2 cloves garlic, minced
- 3-4 oz crumbly bleu cheese
- salt/pepper

- 1 package Jumbo stuffed shells
- 2 cups shredded mexican/mixed variety cheese
Mushroom Ravioli with Browned Butter Sauce
