Herb Roasted Turkey Breast

Great alternative to a whole turkey!
- Brine:
- 8 cups water
- (1/8) 1/4 cup brown sugar
- (1/8) 1/4 cup kosher salt
- 1/2 lemon, sliced
- 1 bay leaf
- Herb Butter:
- 1/2 cup butter, softened
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh thyme
- 1 tablespoon chopped fresh sage
- Salt & Pepper
- 2 fresh bay leaves
- 1 boneless turkey breast halves, skin on (about 2 to 2 1/2 pounds)
Bacon-Wrapped Potatoes with Queso Blanco Dip

1. Place a lightly greased wire rack in an aluminum foil-lined 15- x 10-inch jelly-roll pan
- 2 medium-size red potatoes, cut into 8 wedges each
- 1/2 teaspoon salt
- 16 center-cut bacon slices
- 1/2 teaspoon pepper
- 1/2 cup diced red onion
- 1 tablespoon canola oil
- 1 garlic clove, minced
- 12 ounces queso blanco pasteurized prepared cheese product, cubed
- 1 (8-oz.) block pepper Jack cheese, shredded
- 1/2 cup half-and-half
- 1 (4-oz.) can chopped green chiles
- 1 plum tomato, seeded and diced
Greek Chicken and Orzo Salad

Prepare orzo as directed. Drain and rinse with cold water
- 16 oz. package Orzo
- 3 TB pesto with basil, such as Buitoni
- 2 cups shredded cooked chicken
- 1 pint cherry or grape tomatoes
- 8 oz. feta cheese, cubed
- 6 oz. bag fresh baby spinach
- 4 oz. kalamata olives
- Olive Oil
- Red Wine Vinegar
- Salt & Pepper
Nacho Cheese Sauce

Better for you than the fake stuff!
- 1 1/2 tablespoon butter
- 1 tablespoon corn starch
- 1/2 cup evaporated milk
- 1 ounce cream cheese, cubed
- 1 cup sharp cheddar cheese, shredded
- 1/8 cup Monterey Jack, shredded
- 1/2 tablespoon hot sauce (to start, see below)
- 1 tablespoon paprika
Watermelon Salsa

Stir together the lime zest, lime juice, sugar and 3/4 teaspoon pepper in a bowl
- 1 1/2 teaspoons lime zest (from about 1 lime)
- 1/4 cup fresh lime juice (from about 3 limes)
- 1 tablespoon sugar
- Freshly ground pepper
- 3 cups seeded and finely chopped watermelon
- 1 cucumber, peeled, seeded and diced
- 1 mango, peeled and diced
- 1 jalapeno pepper, seeded and minced
- 1 small red onion, finely chopped
- 8 fresh basil leaves, finely chopped
- 1/2 teaspoon garlic salt
- Tortilla or pita chips, for serving
Corn on the Cob with Feta & Mint Butter
