Classic Strawberry Shortcake

- For the strawberries
- 1 lb. ripe strawberries, hulled (about 4 cups)
- 2 Tbs. granulated sugar; more to taste
- For the biscuits
- 9 oz. (2 cups) unbleached all-purpose flour; more for rolling
- 1/3 cup plus 1 Tbs. granulated sugar
- 2-1/2 tsp. baking powder
- 1/4 tsp. baking soda
- 1/2 tsp. kosher salt
- 4 oz. (1/2 cup) cold unsalted butter, cut into 1/2-inch pieces
- 1 large egg
- 1/4 cup heavy cream; more for brushing
- 1/4 cup buttermilk
- For the whipped cream
- 1-1/2 cups heavy cream
- 2 Tbs. granulated sugar
Carrot Cake Supreme

. Abolish any notions that carrot cake is in some way good for you because this one is definitely not
- Cake:
- 2 c. all-purpose flour
- 2 tsp. baking soda
- 1/2 tsp. table salt
- 2 tsp. ground cinnamon
- 3 large eggs
- 2 c. sugar
- 3/4 c. vegetable oil
- 3/4 c. buttermilk
- 2 tsp. vanilla extract
- 2 c. grated carrot
- 1 8-oz. can crushed pineapple, drained
- 2/3 c. coconut
- 1 c. chopped pecans, toasted (optional)
- Buttermilk Glaze (below)
- Cream Cheese Frosting (below)
- Buttermilk Glaze:
- 1 c. sugar
- 1 1/2 tsp. baking soda
- 1/2 c. buttermilk
- 1/2 butter
- 1 Tbsp. light corn syrup
- 1 tsp. vanilla extract
- Combine ingredients in a large saucepan and bring to a boil over medium heat. Cook, stirring constantly, for 4 minutes or until the syrup is light golden.
- Cream Cheese Frosting:
- 11 oz. cream cheese, softened
- 1/2 c. real butter, softened
- 3/4-1 lb. powdered sugar
- 1 1/2 tsp. vanilla extract (1/2 tsp. can be replaced with almond extract if desired)
- Combine butter, cream cheese, and extracts and beat until combined and fluffy. Add 3/4 lb. powdered sugar and beat on high speed until fluffy. Add more powdered sugar to taste.
Whipped Shortbread

Beat butter until white. Add sugar gradually
- Ingredients: 1 lb. butter
- 1 cup icing sugar
- 3 cups flour
Twix Brownies

- Ingredients:
- 4 ounces unsweetened chocolate; coarsely chopped
- 3/4 cup unsalted butter, cut into cubes
- 1 1/4 cups sugar
- 3 large eggs
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon salt
- 1 cup all-purpose flour
- 12 Fun Size Twix Bars, each cut into thirds
- For the Caramel
- 10 individually wrapped caramel candies (I used Kraft)
- 2 tablespoons heavy cream
Homemade Granola Bars

These granola bars are easy to make gluten free, they are dairy free too, and they also happen to be vegan
- 1 cup pitted prunes
- 1/3 cup dark maple syrup
- 1 tablespoon blackstrap molasses
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- pinch of sea salt
- 2 1/2 cups rolled oats, divided
- 1/2 cup finely chopped dried apricots
- 2/3 cup chopped walnuts, pecans or almonds (or a combination)
- 1/3 cup raw sunflower seeds

Start with the crust, which is your basic butter and graham cracker crumb mixture
- 2 cups cinnamon graham cracker crumbs (just short of 2 sleeves)
- 1/2 cup (1 stick) butter
- 2 8-oz packages cream cheese, softened
- 1/2 cup sugar
- 1 teaspoon vanilla
- 5 eggs, at room temperature
- 1 bag toffee bits
- 1 15-oz can pumpkin (or use homemade, it’s 1 3/4 cup)
- 3/4 cup whipping cream
- 2/3 cups sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon pumpkin pie seasoning
- 1/8 teaspoons salt
- Cool Whip or sweetened whipped cream for topping
Rum Balls

Combine cookie crumbs, walnuts, sugar & cocoa in a mixing bowl
- 1 cup finely crushed dry vanilla wafers
- 1 1/2 cups chopped walnuts
- 1 cup icing sugar
- 2 tblsp cocoa
- 3 tblsp cream
- 2 1/4 tbsp corn syrup
- 1 tblsp Rum
- Icing sugar to coat rum balls
