Matzoh Caramel Buttercrunch

- 4-6 unsalted matzoh boards or sheets
- 1 cup unsalted butter or unsalted Passover margarine
- 1 cup light brown sugar - packed firmly
- 3/4 cup chocolate chips or semi-sweet chocolate - coarsely chopped
- 1 envelope passover vanilla sugar or 2 teaspoons pure vanilla extract*
- If you use vanilla at Passover, use it. If not, the white vanilla sugar, for Passover, is fine. Or you can leave it out entirely.

- 2 cups soy milk
- 2 tablespoons apple cider vinegar
- 2 cups all purpose flour
- 1/4 cup white sugar
- 1/2 tsp salt
- 2 1/4 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 cup unsweetened applesauce
- 1/4 cup melted vegan margarine

- 1 14-ounce package sweetened shredded coconut (about 5 cups)
