Momofuku's Crack Pie

Heat oven to 375 degrees. In a medium bowl, sift together the flour, baking powder, baking soda and salt
- Cookie for crust:
- 2/3 cup plus 1 tbsp flour
- scant 1/8 tsp baking powder
- scant 1/8 tsp baking soda
- 1/4 tsp salt
- 1/2 cup (1 stick) softened butter
- 1/3 cup light brown sugar
- 3 tbsp sugar
- 1 egg
- scant 1 cup rolled oats
- Crust:
- crumbled cookie for crust
- 1/4 cup (1/2 stick) butter
- 1 1/2 tbsp brown sugar
- 1/8 tsp salt
- Filling:
- 1 1/2 cups sugar
- 3/4 cup plus scant 3 tbsp light brown sugar
- 1/4 tsp salt
- 1/3 cup plus 1 tsp milk powder
- 1 cup (2 sticks) butter, melted
- 3/4 cup plus scant 2 tbsp heavy cream
- 1 tsp vanilla extract
- 8 egg yolks
- 2 prepared crusts
- Powdered sugar for garnish
Poppy Seed Chicken

Mix crumbs, margarine and poppy seeds
- 4 chicken breasts boiled/chopped
- 2 tubes Ritz crackers, crushed
- 2 sticks margarine
- 2 tbsp poppy seeds
- 2 cans cream of chicken soup
- 1 8 oz carton sour cream
Salmon-Dill Cakes

In a medium bowl, combine salmon, eggs, dill, and seasoning
- 1 (15 oz) can boneless skinless salmon, drained and flaked
- 2 large eggs, lightly beaten
- 1 tbsp chopped fresh dill
- 1 1/2 tsp Old Bay seasoning
- 1 cup fresh bread crumbs (about 2 white bread slices)
- 2/3 cup finely crushed small buttery crackers
- 1/4 cup canola oil
Bruschetta Couscous Salad

Cook the couscous according to package directions
- 16 oz Israeli couscous
- 1/2 small red onion, finely diced
- 3 cloves of garlic, minced
- 3 ribs celery, finely diced
- 20 oz cocktail tomatoes, quartered
- 1/2 cup fresh basil leaves, torn
- 1/2 cup grated parmesan cheese
- 1 cup small fresh mozzarella balls
- 1/4 cup extra-virgin olive oil
- 2 tbsp balsamic vinegar
- salt and ground black pepper
Spicy Low-Country Shrimp and Grits

For grits, bring milk, butter, salt and pepper to a boil in a medium sauce pan
- Grits:
- 4 cups milk
- 1 tbsp unsalted butter
- 1 tsp salt
- 1 tsp black pepper
- 1 cup stone-ground yellow grits (not instant or quick cooking)
- 1 tsp hot pepper sauce
- 1/2 tsp red pepper flakes
- 1/2 cup shredded cheddar cheese
- Shrimp:
- 1 1/2 lb large shrimp, peeled and deveined
- 2 tbsp Cajun seasoning
- 1/4 lb diced andouille sausage
- 2 tsp chopped garlic
- 2 tsp unsalted butter
- 1/2 tsp cayenne pepper
- 1/4 tsp red pepper flakes
- 1/4 cup red wine
- 1/4 cup fresh parsley, chopped
- 1/4 tsp salt
- 1/4 tsp black pepper

Mexican Quinoa Chicken Fajita Casserole

Preheat oven to 350 degrees
- 1 1/2 cups uncooked white quinoa
- 1 14-oz can black beans, drained and rinsed
- 1 1/2 cups salsa (I use fresh)
- 2 cups chicken broth (add more during cooking if needed)
- Sea salt and ground pepper to taste
- 3 cups shredded pepper-jack cheese, divided in half
- 3 tbsp extra virgin olive oil
- 4 cloves minced garlic (optional)
- 2 small jalapeños, deseeded and finely diced
- 1 onion, sliced and chopped into large pieces
- 3 bell peppers, sliced then chopped into large pieces
- 2 tsp Fajita seasoning (optional)
- 1 1/4 lbs boneless, skinless chicken breast, cut into small pieces
- 2 tbsp Fajita seasoning

- 1 8 oz container soft-style cream cheese with chives and onion
- 2/3 cups milk
- 1/4 cup grated Romano cheese or Parmesan cheese
- 1 9-oz pkg (2 cups) frozen diced cooked chicken, thawed
- 1 10-oz pkg frozen chopped broccoli, thawed and drained
- 1/2 of a 7 oz jar roasted sweet peppers, drained and sliced or one 4-oz jar diced pimiento, drained
- 1/4 tsp ground black pepper
