Easy Meatloaf

Preheat oven to 350. Lightly grease a 5x9 loaf pan
- 1/2 c packed brown sugar
- 1/2 c ketchup
- 1 1/2 lbs lean ground beef
- 3/4 c milk
- 2 eggs
- 1 1/2 t salt
- 1/4 t pepper
- 1 small onion, chopped
- 1/4 t ground ginger
- 3/4 c finely crushed saltine cracker crumbs
Cucumber Mushroom Cumin Salad

1. Combine cucumber, mushrooms, and onion in medium bowl
- 2 cups cucumber, sliced and quartered
- 2 cups mushrooms, sliced and quartered
- 1/2 cup red onion, sliced and quartered
- 1 1/2 tablespoons lime juice
- 1 tablespoon fresh cilantro, minced
- 1/2 tablespoon jalapeno, minced
- 1 teaspoon vegetable oil
- 1/4 teaspoon ground cumin
- 1/4 teaspoon salt
Roasted Red Pepper and Feta Quinoa Burgers (skinny)

Clean the quinoa. Cook as to package instructions, then place in a large mixing bowl and set aside
- 1/3 c quinoa
- 1 red pepper, chopped
- 1 small red onion, chopped
- 1 egg
- salt and pepper to taste
- 84 gm of feta cheese
- baby spinach leaves
- 2 whole wheat rolls, toasted
- 12 cherry tomatoes
- 1 garlic clove, crushed
- 1 t brown sugar
- splash of balsamic vinegar
- Pam for pan
Beer and Ketchup Meatballs

Preheat oven to 400. Place beer and ketchup in slow cooker on high to simmer
- 28 oz ketchup
- 24 oz beer
- 1 1/2 lbs ground beef
- 2 t garlic powder
- 1 onion chopped
Grilled Chicken Kabobs

- 6 boneless, skinless chicken breasts cut into 1 in cubes
- 1 green and 1 red bell pepper, cored, seeded, and cut into 1 in squares
- 12-16 small cleaned mushroom caps

- 2 t garlic powder
- 2 t onion powder
- 2 t dried rosemary leaves, crushed slightly

Corn and Broccoli Casserole

- 1 pkg 10 oz frozen chopped broccoli, thawed
- 1/2 c crushed saltines, divided

Chicken and Sausage Skewers

- 10 oz boneless skinless chicken breasts cut into small pieces
- 6 oz chorizo, linguica, or hot Italian sausage, cut into 1 1/2" lengths
- 2 red bell peppers, cut into 1 1/2" wide strips
- 1 med onion, cut into 8 wedges
- 1/4 c orange juice
- 1/2 t grated orange zest
- 2 T finely chopped fresh oregano or 2 t dried
- 1 T smoked or plain paprika
- 1 1/2 T extra virgin olive oil
- 4 cloves garlic, crushed
Margaritas, Albuquerque Style

RUB each glass rim with lime wedge; swirl glass in salt to coat rim
- 1 each lime, cut into wedges
- coarse salt
- 1 can frozen lime concentrate 6oz
- 3/4 cup tequila
- 6 tablespoons triple Sec
- 1 can lemon lime or grapefruit soda 12oz
- 3 cups ice cubes
- lime twists for garnish
Spicy Bean and Sausage Dip

Crumble sausage in a large skillet over med heat
- 16 oz roll Jimmy Dean Regular Sausage
- 16 oz can of refried beans
- 1/4 c enchilada sauce
- 1/4 c sour cream
- 1 T enchilada sauce
- 1/4 c sliced green onions
- tortilla chips
