Preheat oven to 325. Combine crumbs and butter and press onto bottom of a 9 in springform pan
- crust
- 1 c graham cracker crumbs
- 2 t butter
- Filling
- 2 8 oz cream cheese softened
- 1/2 c sugar
- 1/2 t lemon extract if tolerated
- 1 t grated lemon rind if tolerated
- 1/2 t vanilla extract
- 2 eggs separated
Mega Lasagna

Preheat oven to 425. Cook the lasagna noodles in salted water, according to package directions
- 16 oz lasagna noodles
- 1/4 lb cheddar cheese
- 1/4 lb Fontina cheese
- 1/4 lb Jack cheese
- 1/4 lb mozzarella
- 1 Tbs + 2tsp EVOO
- 3 c favorite tomato sauce
Sweet Potato and Fontina Pizza

Preheat oven to 450. Grease a 12 in pizza pan
- 1 medium sweet potato
- 2 T water
- 1/4 t salt
- 1/8 t coarsely ground pepper
- 1 tube refrigerated pizza crust (13.8oz)
- 1 c (4 oz)shredded part skim mozzarella cheese
- 1 c (4 oz)shredded fontina cheese
- 2 T olive oil, divided
- 1 t minced fresh rosemary or 1/4 t dried crushed rosemary
- 1 t minced fresh thyme or 1/4 t dried thyme
- 1/4 c grated Parmesan cheese
Baked Chicken Salad

Mix main ingredients together and put into greased 9 x 13 inch pan
- Topping:
- 3 cups diced cooked chicken
- 1 cup celery, chopped
- 1/2 cup onion, chopped
- 1 cup cooked rice (I make some Minute Rice if I don't have any leftovers)
- 1 cup drained water chestnuts
- 3 hard-boiled eggs
- 3/4 cup mayo
- 1 tsp lemon juice
- 1 can cream of chicken soup (or broth) (I've never tried it with broth)
- 1 cup slivered almonds
- 1 cup crushed cornflakes
Spaghetti Squash Casserole 1

Cut squash in half lengthwise; scoop out seeds
- 1 small spaghetti squash 1 1/2-2lbs
- 1/2 c water
- 1 lb ground beef
- 1/2 c chopped onion
- 1/2 c chopped sweet red pepper
- 1 clove garlic, minced
- 1 c canned diced tomatoes
- 1/2 t dried oregano
- 1/4 t salt
- 1/8 t pepper
- 1 c shredded mozzarella or cheddar cheese
- 1 T chopped fresh parsley
Date Pinwheel Cookies

HEAT dates, orange juice, sugar, butter and 1T flour in medium saucepan over medium heat
- 1 1/4 cups dates, pitted and finely chopped
- 3/4 cup orange juice
- 1/2 cup sugar
- 1 tablespoon butter
- 3 cups flour plus 1 tablespoon, divided
- 2 teaspoons vanilla, divided
- 1 cup firmly packed brown sugar
- 4 ounces cream cheese
- 1/4 cup shortening
- 2 each eggs
- 1 teaspoon baking soda
- 1/2 teaspoon salt
Spinach Cheddar Squares (Skinny)

Sprinkle bread crumbs evenly into an 8 in square baking dish coated with cooking spray
- 1 T bread crumbs
- 3/4 c shredded reduced fat cheddar cheese, divided
- 10oz package frozen chopped spinach, thawed and squeezed dry.
- 1/4 c finely chopped sweet red pepper
- 1 1/2 c egg substitute
- 3/4 c nonfat milk
- 2 T grated parmesan cheese
- 1/2 t dried minced onion
- 1/2 t salt
- 1/4 t garlic powder
- 1/4 t pepper
Bacon Cheeseburger Meatloaf

1. Preheat oven to 350 degrees F (175 degrees C)
- 10 slices bacon
- 1/3 cup ketchup
- 2 tablespoons prepared yellow mustard
- 1 pound ground beef chuck
- 1 (8 ounce) package shredded Cheddar cheese
- 2 eggs, beaten
- 1/4 cup dry bread crumbs
- 1/4 cup mayonnaise
- 1 tablespoon Worcestershire sauce
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 (3 ounce) can French-fried onions
Quick BBQ Beans

In an ungreased 8x8 disposable foil pan, combine all ingredients
- 1 can 16 oz kidney beans, rinsed and drained
- 1 can 15.5 oz great northern beans, rinsed and drained
- 1 can 15 oz pork and beans
- 1/2 c barbecue sauce
- 2 T brown sugar
- 2 t prepared mustard
Cheesy Broccoli Bake

- 1/2 lb softened cheese product
- 10 3/4 ounce can condensed cream of mushroom soup
- 8 ounce can sliced water chestnuts
- 2 tablespoon butter
- 1/4 cup chopped onion
- 1/4 lb fresh mushrooms, sliced
- 1/4 cup chopped celery
- 2 lb fresh broccoli, trimmed and cut up
- 1/2 teaspoon garlic salt
- 1/4 teaspoon pepper
- 1 cup grated cheddar cheese
