Cheesy Squash Casserole

Preheat the oven to 350 degrees F
- 1 tablespoon vegetable oil
- 6 medium yellow summer squash, thinly sliced
- 1 large Vidalia onion, thinly sliced
- 1 tablespoon butter
- 1/2 cup grated Parmesan
- 1 cup shredded sharp Cheddar
- 1/2 cup sour cream
- Salt and freshly ground black pepper
- 1 sleeve crackers, crushed medium to fine (recommended: Ritz)
Best BBQ Sauce

Mix all the ingredients together in a saucepan and bring to boil, simmering 15 min
- 2 8oz cans tomato sauce
- 1 med onion, chopped and sauteed in butter
- 1/8 t garlic salt
- 1 T worchestershire sauce
- 2-3 squirts of tabasco sauce
- 1 c packed brown sugar
- 1/4 c wine vinegar
- 1 T parsley flakes
Hungarian Pot Roast with Potatoes

ON a shallow plate combine salt, ground pepper, and flour
- 1 teaspoon flour
- 3 pounds chuck roast
- 1/4 cup bacon drippings
- 2 each onions, finely chopped
- 3 cloves garlic, finely chopped
- 1 each tomato, sliced
- 1 each green pepper, sliced
- 1 each bay leaf
- 2 tablespoons minced fresh parsley
- 2 1/2 cups water
- 4 each potaotes
Honey Baked Red Onions

Peel and cut onions in half crosswise
- 3 large red onions (about 3 lbs.)
- 1/3 cup honey
- 1/4 cup water
- 3 tablespoons butter or margarine, melted
- 1 teaspoon paprika, preferably sweet Hungarian
- 1 teaspoon coriander
- 1/2 teaspoon salt
- 1/8 teaspoon cayenne pepper
Green Bean with Caramalized Red Onion

Bring a large pan of salted water to a boil
- 1 lb whole thin green beans, stem ends trimmed
- 2 T extra virgin olive oil
- 1 large red onion, peeled, halved and thinly sliced
- 1/2 t kosher salt
- 1/4 t freshly ground pepper
- 1 small clove garlic, minced
Parmesan Potato Rounds

PLACE half of the potatoes in a greased 2 quart baking dish
- 4 medium red potatoes, thinly sliced
- 1 small onion, sliced and separated
- 3 tablespoons butter or margarine
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1/8 teaspoon garlic powder
Barbecue Beef Sandwiches

- 3 pounds beef boneless chuck roast
- 1 cup barbecue sauce
- 1/2 cup apricot preserves
- 2 tablespoons chopped red or green pepper
- 1 tablespoon Dijon mustard
- 2 teaspoons packed brown sugar
- 1 small onion, sliced
- 12 each buns, split
Hungarian Goulash II

IN medium bowl, toss meat cubes with flour to coat
- 3 pounds boneless beef chuck, cut in 1" cubes
- 1/4 cup flour
- 1/4 cup oil
- 3 cups sliced onions
- 1 tablespoon paprika
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 1 can condensed beef broth
- 4 quarts water
- 4 teaspoons salt
- 1 tablespoon oil
- 9 1/2 cups extra wide egg noodles (cooked)
- 2 tablespoons butter or margarine
- 1 tablespoon poppy seeds
- 1 cup sour cream (or more if you like it creamy)
Granny Smith Pork

Heat oil in a large nonstick skillet
- 1 pound boneless pork loin, cut into 1/2 inch cubes
- 1 teaspoon vegetable oil
- 4 Granny Smith apples, cored and sliced into 1/2 inch wedges
- 1 cup dry white wine
- OR
- 1 cup chicken broth
- 1/2 cup brown sugar
- 1/4 cup cider vinegar
- 3 tablespoons cornstarch
- 2 tablespoons Worcestershire sauce
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
