Garlic Mashed Potatoes

  • 6 large potato
  • 6 oz container of cream cheese w/garlic herbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup milk, more or less
  • 4 tablespoons butter
  • 1/2 cup Parmesan cheese
  • paprika

Preparation

Step 1

PEEL potatoes and cut into cubes. Cook in boiling salted water for 15 to 20 minutes or until done. Drain.

IN large mixing bowl, add cream cheese, salt, pepper and butter. To this add the drained potatoes. Beat with mixer or mash by hand. Add Parmesan cheese and mix well. If mixture is stiff, (potatoes will stiffen upon sitting) add some of the milk.

TRANSFER potato mixture to 13x9 inch greased baking dish. Sprinkle top of potatoes with paprika and some additional Parmesan cheese if you wish.

IF baking now, place in 350 oven for 20-30 minutes. Can be done ahead and kept in refrigerator. If s0, baking time will increase by 10-15 minutes.
