Chicken Tortilla Soup

1. Saute onion, garlic, jalapeno, green pepper and zucchini with olive oil in a large pot until soft
- 2 teaspoons olive oil
- 1 medium onion, chopped
- 4 garlic cloves, minced
- 1 medium jalapeno pepper, chopped
- 1/2 medium green pepper
- 1 zucchini, chopped
- 4 small boneless skinless chicken breasts
- 2 cups frozen corn
- 1/2 cup dry white wine or water
- 2 teaspoons cumin
- 1 teaspoon chili powder
- 1/4 teaspoon cayenne pepper
- 4 (14 ounce) cans chicken broth
- 2 (14 ounce) cans diced tomatoes
- 2 (8 ounce) cans tomato sauce
- 1 cup white rice
- Toppings (optional)
- fried corn tortillas
- avacado slices
- shredded mexican cheese
Kalua Pig

Pierce pork with carving fork or knife
- 3 lb pork butt (or shoulder)
- 1 1/2 tsp liquid smoke
- 2 1/4 tsp Hawaiian salt, sea or kosher salt
- varieties - 2 c apple cider or pineapple juice in crock pot
- or 3 slices of bacon in oven
Rye Bread Crostini

Preheat oven to 400 degrees F
- 6 slices German rye bread
- 2 large garlic cloves, halved
- 2 tablespoons vegetable oil
- 3 1/2 ounces German soft, spreadable cheese
- 2 medium-ripe tomatoes, seeded and diced
- 3 basil leaves, sliced very thinly lengthwise
- Sea salt and freshly ground pepper
Thai Chicken

In small saucepan combine marinade ingredients
- MARINADE
- 1/2 cup olive oil
- 1/3 cup rice vinegar
- 3 tbsp soy sauce
- 1 tsp sesame oil
- 2 tsp lime juice
- 2 tsp crushed red pepper
- 1/4 tsp Tabasco
- 1/4 tsp salt
- 1/4 tsp white pepper
- 2 green onions, chopped
- 1 jalapeno pepper, chopped
- 4 large cloves garlic, minced
- ----------------------------------
- 2 chicken breasts, cut into strips
- 1 lb. linguine
- bunch fresh asparagus, steamed and chopped
- 1 pkg frozen oriental veggies (broccoli, carrots, water chestnuts)
- 1/4 cup peanuts
Coconut Fried Shrimp

Place flour, beer and coconut in 3 small bowls
- 1/4 c flour
- 1 lb raw shrimp
- 1 beer
- 1/4 c coconut flakes
Hawaiian Rice Pilaf

Melt butter in oven-proof casserole dish (with lid)
- 1 tbsp butter
- 1 1/2 c white rice
- 2-3 cloves chopped garlic
- 1/3 c diced red pepper
- 1/3 c diced yellow pepper
- 3 c chicken broth
- 1/2 c golden raisins
- 1/2 c roasted macadamia nuts
- 1/4 tsp ground sage
- salt to taste
- 1 c diced pineapple
- 1/4 parsley
Champagne Punch

Combine all the ingredients except Champagne and garnishes and stir until sugar is dissolved
- 1 1/3 cups lemon juice
- 1 cup superfine sugar
- 1/2 cup Grand Marnier
- 1/2 cup triple sec
- 1/2 cup cognac
- 1/2 cup OJ
- 2 bottles chilled champagne
- orange, lemon and/or strawberry slices to garnish
Potato Bacon Soup

Heat 3 tbsp of the butter or margarine in a large saucepan over medium low heat
- 4 tbsp butter or margarine
- 6 medium potatoes, peeled and coarsely diced
- 1 1/2 About 1 1/2 cups diced celery root
- 2 medium carrots
- 1 1/2 About 1 1/2 qts. water
- 1 leek, trimmed and finely diced
- 1 medium onion, diced
- 1 cup half and half
- 1/2 tsp salt
- 1/4 tsp freshly ground black pepper
- 1/4 tsp nutmeg
- 6 lean bacon slices, diced
- garlic croutons
- 1 tbsp chopped fresh parsley
Beef Teriyaki

Soak skewers in water so they won't burn
- 3 lb flank steak
- 1/3 c brown sugar
- 1/2 c soy sauce
- 1 garlic clove, minced
- 1 (1/2 inch) piece ginger root, grated
Pizza Dip

Mix first 4 ingredients and spread in pie plate
- 1 pkg cream cheese, softened
- 1 tblsp horseradish
- 1 c. ketchup
- 1 can tiny shrimp
- 1/2 c. tomatoes
- 1/2 c. green pepper
- 1/2 c. scallions
- 1/2 c. black olives
- 1/2 c. mozzarella cheese
- Ritz crackers
