Mashed with cream cheese

1. Place potatoes and 1 tbsp salt in medium pot, cover with cold water by 2 inches, and bring to a boil
- 3 1/2 lbs white or Yukon Gold potatoes
- coarse salt and freshly ground pepper
- 8 oz cream cheese, softened
- 4 oz (1 stick) unsalted butter, softened
- 1/4 cup whole milk, warmed
- 1/2 cup heavy cream, warmed
Nana G's Spaghetti Sauce

Put tomato in blender or food processor
- optional:
- 3 cans whole peeled tomato with basil
- 1 can tomato paste
- 1 tbsp sugar
- 1 tbsp salt
- 1/4 tsp black pepper
- 1/4 tsp ground cloves
- oregano
- basil
- 1 medium onion
- 1 head garlic, minced
- 1 head garlic, roasted
- 1 lb ground beef
- 1 cup bread crumbs
- 2 eggs
- parsley
- oregano
- melted butter
- grated romano
Salsa Reuben Dip

Combine cream cheese, sour cream and salsa
- 8 oz cream cheese
- 1 cup sour cream
- 1 cup thick chunky salsa
- 4 oz cooked corned beef, chopped
- 3 oz shredded swiss cheese
- 1/2 cup souerkraut
- 1/2 clove garlic, minced
French Toast Bake

Mix first 3 ingredients together and spread in bottom of 13x9 pan
- 1 1/2 sticks butter
- 1 1/2 cup brown sugar
- 1 1/2 tsp cinnamon
- 1 loaf toasting bread (thick sliced)

- 1 tsp vanilla

Spinach-Cheese Calzone

THE DOUGH: Place the water in med-sized bowl
- The Dough:
- 1 cup wrist temp water
- 1 1/2 tsp active dry yeast
- 1 tbs honey or sugar
- 1 1/2 tsp salt
- 2 1/2 to 3 cups flour
- olive oil
- The filling:
- 1 olive oil
- 1 cup minced onion
- 1 lb. spinach, stemmed and minced
- 1/2 tsp salt
- lots of black pepper
- 4-5 cloves garlic, minced
- 1 tbs dried basil, or 3 tbs fresh
- 1 lb ricotta or cottage cheese
- 2 cups (packed) grated mozzarella
- 1/4 cup grated parmesan
Apple Fritters

Wash, peel and core the apples
- 1 lb. 10 oz. cooking apples
- 9 oz. plain flour
- 3 tsp. baking powder
- 1 oz. sugar
- 1 egg
- 1/2 pint milk
- fat for deep frying
- 2 oz sugar for sprinkling
Overnight Macaroni and Cheese

- 8 oz elbow macaroni
- 1 1/4 cups milk
- 2 cups heavy cream
- 1 cup grated Gruyere or Emmental

Wonderful Overnight Slaw

In 4 qt bowl, combine the vegetables and olives
- 1 med head cabbage
- 1 med red onion
- 1/2 c chopped red pepper
- 1/2 c chopped green pepper
- 1/2 c sliced stuffed olives
- 1/2 c white vinegar
- 1/2 c vegetable oil
- 1/2 c sugar
- 2 tsp dijon mustard
- 1 tsp ea - salt, celery seed and mustard seed

Take crusts off bread and roll out with rolling pin
- 1 loaf Wonder Bread
- 8 oz cream cheese, softened
- 1 egg yolk
- optional - 3/4 cup powdered sugar
- 1 c sugar
- 2 tsp cinnamon
- 3/4 c melted butter

Preheat oven to 425. Heat the oil in large skillet over medium heat
- 1/4 cup extra-virgin olive oil
- 5 garlic cloves, peeled and smashed
- 2 can peeled tomatoes - (28 oz) with the liquid.
- 2 teaspoons crushed red pepper flakes, plus more for serving.
- 2 teaspoons red wine vinegar
- 5 basil leaves, 2 whole, 3 torn by hand
- 2 teaspoons salt
- 8 eggs at room temperature
