Jambalaya

preheat oven to 325. Rinse the chix pieces and wipe dry
- 4-5 pound chix, in quarters (4 boneless breasts
- 4 tablespoons oil
- salt
- freshly ground pepper
- 1/8 teaspoon cayenne pepper
- 1 cup diced ham (use pre-cooked hamsteak)
- 1 cup chopped green and/or red pepper 1cup chopped celery
- 1 large onion chopped
- 4 cloves garlic, minced
- 5 cups chix broth
- 1/4 cup minced parsley
- 1 1/2 teaspoons thyme
- 1 cup chopped canned or fresh tomatoes
- 2 cups rice

Shrimp Salad

Mix everything up except the shrimp because they break up easily
- 2 jars chopped pimento - drained on a paper towel for 1/2 hr to an hour.
- 4 or 5 can medium shrimp - run under cold water for 30 seconds and drain all shrimp on paper towels for 1/2 hour to an hour.
- 2 packages creamettes pasta or very small shell pasta. Cook and drain all water. I also spread this out to let dry.
- 1/2-1 cup finely chopped celery
- 2-3 tbsp Salad Supreme seasoning
- Miracle Whip
- 1 tbsp mustard
- 1/2 t sugar
Peanut Noodle Salad

Peel cucumbers, cut in half lengthwise, removing and discarding seeds
- 2 lg cucumbers
- 1 c soy sauce
- 1/2 c coconut milk
- 1/2 c rice wine vinegar
- 1/2 c chunky peanut butter
- 4 garlic cloves, minced
- 1 tsp sesame oil
- 1/2 to 1 tsp dried crushed red pepper
- 1/2 tsp salt
- 1 (16 oz) package soba noodles or angel hair pasta, cooked
- 1 (8 oz) package shredded fresh carrot
- 6 green onions, cut diagonally into 1 1/2 in pieces
German Applesauce Meatloaf

Preheat the oven to 350 degrees
- 1 1/2 lb ground beef
- 1/2 lb ground pork
- 1/2 c finely diced onion
- 1 cup applesauce
- 1 cup breadcrumbs
- 3 tbsp ketchup
- 2 tsp salt
- 1/4 tsp black pepper
- As an alternative to the first 2 ingredients, BJs has a meatloaf mix which is beef, pork and veal

- 2 t SALT
- 1/2 t GARLIC POWDER
- 3 t WORCESTERSHIRE SAUCE
- 2 cups rice Chex cereal
- 2 cups wheat Chex cereal
- 2 cups corn Chex cereal
- 1/2 bag of stick pretzels
- 2 or 3 cups plain Cheerios
- 1/2 to 3/4 bag Bugles
- One or almost two cans Planter’s cashews
- One can Planter’s mixed nuts
- room permitted, 1/2 bag waffle pretzels.
- Make sure you are able to stir this mixture, so do not overflow.

German Style Mashed Potatoes

Place potatoes in a large saucepan and cover with water
- 3 pounds red potatoes, peeled and cubed
- 2 large tart apples, peeled and chopped
- 4 bacon strips, diced
- 2 medium onions, sliced
- 1 tablespoon sugar
- 1 tablespoon cider vinegar
- 3/4 teaspoon salt

Preheat the grill or burner to high
- 3 lbs new potatoes
- 1 yellow onion, quartered
- 1/2 lb bacon, diced
- 1 large red onion, diced
- 3/4 cup cider vinegar
- 1 tbsp mustard seeds
- 1/4 cup canola oil
- salt and freshly ground pepper
- 8 green onions, thinly sliced
- 1/4 cup chopped fresh parsley leaves
Caramel Apple Cheesecake

Unwrap caramels and place in a heavy saucepan or microwave-safe bowl
- Topping:
- Crust: 4 cups graham cracker crumbs
- 12 TBS. margarine, melted
- Combine graham cracker crumbs and margarine. Press onto bottom and sides of a buttered 10 1/4 in springform pan.
- Filling: 21 oz. caramels (approx 72 carmels)
- 3/4 cup sugar
- 7 oz. evaporated milk
- 3 8oz pkgs. cream cheese, softened
- 3 eggs
- 2 1/4 cups chopped apples
- 1 1/2 TBS flour
- 3/4 tsp. cinnamon
- 3/4 cup chopped pecans
- 24 caramels
- 2 TBS evaporated milk
- 1/2 cup chopped pecans

- 1 medium or 2 c. onion
- 4 stalks or 1 c. celery
- 4-5 cloves garlic, minced
- 1 stick butter
- 4 c. chicken broth
- 2 c. heavy cream
- 1/2 c. tequila (optional)
- 1 bottle (8 oz.) clam juice
- 2 potatoes, peeled and diced
- 1 tsp cayenne pepper (or more according to the crowd)
- 1/2 tsp nutmeg
- 6 oz. shredded cheddar
- 1 small fresh lobster
- 8 oz shrimp
- 8 oz clams
- small haddock filet
