White Mac and Cheese

1. Heat oven to 350°. Lightly coat the inside of a shallow 2 1/2 quart baking dish with Pam
- 1 piece (about 3 ounces, 5 inches long) crusty French bread - OR, store bought bread crumbs
- 1 medium-size onion, diced
- 1 box (1 pound) mini rigatoni pasta
- 1 package (8 ounces) mascarpone cheese
- 1 package (5.2 ounces) spreadable herb cheese OR, 1 package (3.5 ounces) herbed goat cheese
- 2 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
- Pinch ground nutmeg
- Pinch cayenne pepper
- 8 ounces white cheddar cheese, shredded
- 1 tablespoon grated Parmesan cheese
Beef Enchiladas

Brown meat and drain. Mix with 1/2 c salsa, 1 c cheese and taco seasonings
- 1 lb beef
- 16 oz salsa
- 2 c shredded mexican cheese
- taco seasonings
- 8 burrito size tortillas
- Sour cream
Shanghai Spring Rolls

Peel shrimp, and devein, if desired; finely chop
- 1/2 pound unpeeled fresh shrimp
- 2 large eggs, lightly beaten
- 1/2 pound ground pork
- 1 (8-ounce) can water chestnuts, drained and minced
- 1 (8-ounce) can bamboo shoots, drained and minced
- 3 garlic cloves, minced
- 2 green onions, diced
- 2 tablespoons minced fresh ginger
- 1 tablespoon soy sauce
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 1 (12-ounce) package spring roll wrappers
- Vegetable oil
- Sweet Chili Sauce
- Lettuce leaves (optional)
Reuben Egg Rolls

Saute sauerkraut and caraway in skillet over med high heat
- 1 1/2 cups sauerkraut, drained
- 1 1/2 tsp caraway seeds
- 1/2 lemon, juiced
- 6 oz corned beef, thinly sliced, cut into strips
- 4 oz swiss cheese, thinly sliced, cut into strips
- 1 egg, beaten with 1 tbsp water
- 8 egg roll wraps
- 2 tbsp yellow mustard
- veg oil for frying
- thousand island dressing for dipping
Sauerbraten

In large saucepan over medium heat, combine all marinating ingredients
- 2 cups cider vinegar
- 2 cups water
- 1/3 cup brown sugar
- 1/2 tsp ground cloves
- 1/2 tsp ground allspice
- 1 tbsp salt
- 1/2 tsp ground black pepper
- 6 black peppercorns
- 1 bay leaf
- 2 onions, diced
- 3 carrots, chopped
- 2 stalks celery, chopped
- 4 lb rump roast per recipe, I buy tenderloin roast
- 2 tbsp oil
- 1 cup sour cream
Buffalo Chicken Dip

Heat chicken and hot sauce in a skillet over medium heat, until heated through
- 2 (10 ounce) cans chunk chicken, drained
- 2 (8 ounce) packages cream cheese, softened
- 1 cup Ranch dressing
- 3/4 cup pepper sauce (such as Frank's Red Hot®)
- 1 1/2 cups shredded Cheddar cheese

- SERVE WITH ANY
- 1 bunch celery, cleaned and cut into 4 inch pieces
- 1 (8 ounce) box chicken-flavored crackers

Spinach Crostini

Combine first 8 ingredients; spread on 1 side of each bread slice
- 1 (10-ounce) package frozen chopped spinach, thawed and drained
- 2 plum tomatoes, diced
- 1 small onion, diced
- 1 garlic clove, minced
- 1/2 cup crumbled feta cheese
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/4 teaspoon pepper
- 1 (16-ounce) French bread loaf, cut into 1/2-inch slices
Mini Tacos

1. In each Tostito Scoop you will add the ingredients in the order above 2
- Tostito Scoops
- Old El Paso Chicken or Beef (yellow tub found in deli section)
- 1 can of Black beans*
- Sour Cream **
- Taco Seasoning (approx. 2-3 tsp)**
- Mexican Cheese Blend (finely shredded)
- Scallions (chopped)
Pina Colada Fruit Dip

- 1 8 oz can crushed pineapple in its own juice, undrained
- 1 small pkg instant coconut pudding mix
- 3/4 c milk
- 1/2 c sour cream
