Ingredients

  • MARINADE
  • 1/2 cup olive oil
  • 1/3 cup rice vinegar
  • 3 tbsp soy sauce
  • 1 tsp sesame oil
  • 2 tsp lime juice
  • 2 tsp crushed red pepper
  • 1/4 tsp Tabasco
  • 1/4 tsp salt
  • 1/4 tsp white pepper
  • 2 green onions, chopped
  • 1 jalapeno pepper, chopped
  • 4 large cloves garlic, minced

  • 2 chicken breasts, cut into strips
  • 1 lb. linguine
  • bunch fresh asparagus, steamed and chopped
  • 1 pkg frozen oriental veggies (broccoli, carrots, water chestnuts)
  • 1/4 cup peanuts

Step 1

In small saucepan combine marinade ingredients. Place the chicken breast in a bowl with 3 tablespoons of the marinade and marinate 20-30 minutes at room temperature.

In a non-stick pan, saute chicken 7-10 minutes or until cooked. Warm remaining marinade.

Meanwhile, cook pasta and vegetables. Toss all together in a large low serving bowl, topping with marinade and peanuts.
