- Grate rind of 3 oranges

In a large saucepan combine water and crab-boil seasoning
- 4 cups water
- 1 3 (ounce) package crab-boil seasoning in bag or Homemade Crab-Boil Seasoning (see recipe below)
- 1 lb fresh or frozen shrimp in shells
- 1 cup chopped celery
- 1 cup coarsely chopped red or green sweet pepper
- 1/2 cup chopped onion
- 1 cup low-fat mayonnaise
- 3/4 teaspoon Cajun seasoning
- 1/4 teaspoon salt
- 1/8 teaspoon pepper

For ganache, put chocolate chips in a metal mixing bowl
- Ganache:
- 3/4 cup semisweet chocolate chips
- 1/2 cup heavy cream
- Filling:
- 1 (8-ounce) package, cream cheese, softened
- 2 1/2 cups confectioner's sugar
- 1/3 cup heavy cream, plus 3/4 cup, whipped soft, divided
- 5 (1 ounce) squares white chocolate, melted
- 1/2 teaspoon orange zest
- 2/3 cup roasted chopped macadamia nuts
- 1 (9-inch) prebaked deep-dish pie shell
- Garnish:
- 1/2 cup heavy cream
- 2 tablespoons confectioner' sugar
- Whole macamia, about 1/3 cup

- 1 cup chopped onion
- 14 ounce can fat free chicken broth
- 1 teaspooon minced garlic
- Paprika dried basil and oregano (to taste)
- 1/8 teas freshly ground black pepper
- 1/8 teaspoon fennel seeds crushed
- 28 ounce can crushed tomatoes in sauce
- 28 ounce can whole tomatoes undrained
- 2 teaspoons Worcestershire sauce
- 1/4 cup chopped fresh parsley
- 1/2 teaspoon sugar to taste
- 1 lb lean ground turkey
- 1/2 cup fresh bread crumbs
- 1/4 cup finely chopped onion
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
- 2 teaspoons minced garlic
- 2 large egg whites beaten until frothy.
- 1/2 teaspoon each salt, dried oregano and basil
- 1/4 teaspoon freshly ground black pepper
APPETIZER, Guacamole Chunky (from newspaper)

Halve avocados, and remove pits
- 3 ripe Hass avocados
- 2 tablespoons freshly squeezed lime juice or to taste
- 2 tablespoons freshly squeezed lemon juice or to taste
- 2 plum tomatoes, fnely diced
- 1/2 medium onion, finely diced or about 3 green onions chopped with tops.
- 1 jalapeno pepper, minced with seeds removed.
- 1 garlic clove, minced
- 2 tablespoons chopped, fresh cilantro
- Coarse salt and freshly ground pepper
