Risi e Bisi with Ham and Parmesan

1. In a large pot, melt the butter over moderately low heat
- 6 tablespoons butter
- 1 onion, chopped
- 1 rib celery, chopped
- 1 large clove garlic, minced
- 1/2 cup dry white wine
- 2 quarts canned low-sodium chicken broth or homemade stock
- 1 1/2 cups rice, preferably arborio
- 2 tablespoons chopped fresh parsley
- 1 3/4 teaspoons salt
- 2 cups frozen petite peas (one 10-ounce package), defrosted
- 1 1/4 - pounds piece deli ham, cut into small dice
- 3/4 cup grated Parmesan
- 1/2 teaspoon fresh-ground black pepper
Sauce, Creole Mustard

In a small bowl, combine all ingredients
- makes about cup
- 2/3 cup sour cream
- 3 tablespoons Creole mustard
- 1 1/2 teaspoons dry Ranch dressing mix
- 1 teaspoon fresh lemon juice
- 1/4 teaspoon Creole seasoning
- 1/4 teaspoon onion powder
- 1/4 teaspoon garlic powder
Cake Pineaple coconut bundt cake muffin size

In mixing bowl beat eggs until fluffy Add oil and sugar and beat until light
- 1 1/ cups chopped Pineapple
- 2 eggs
- 1/2 cup vegetable oil
- 3/4 cup sugar
- 2 cups plain flour
- 1/2 teaspoon cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon nutmeg powder
- 1/2 teaspoon salt
- 1/2 cup sweetened coconut
- 3 tablespoons walnuts or pecans

1. Preheat oven to 350 degrees
- 2 Ripe Bananas
- 3/4 cups Chickpeas
- 1/4 cup Coconut Oil
- 1/4 cup honey
- 4 Stevia packets (like you'd put in your coffee)
- 2 cups Whole Wheat Pastry Flour (or sub other flour)
- 1 teaspoon Baking Powder
- 1 teaspoon Baking Soda
- 2 Eggs
- 1 1/2 cup White Chocolate Chips (could use less -- one cup)

- 1 (16-ounce) container sour cream
- 1 (10 3/4 ounce) can cream of mushroom soup
- 1 (5-ounce) package shredded Swiss cheese
- 1/4 cup water
- 1 teaspoon dried dill weed
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- Additional green onions, sliced (optional)
