Lemon-Raspberry Muffins

- 2 1/4 cups all-purpose flour, divided
- 1/2 cup sugar
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 (8-oz) container lemon yogurt
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon grated lemon rind
- 1 (6-oz) package fresh raspberries (about 1 1/4 cups) or 1 (6-oz) package frozen raspberries, unthawed (blueberries may be substituted for raspberries).
- 3 Tablespoons sugar
- 1 Tablespoon cold butter or margarine
Baked Potato & Leek Soup with Cheddar & Bacon

Heat the oven to 375ºF. Scrub the potatoes in water, pat dry, and pierce in several places with a fork
- 2 medium russet potatoes (about 1/2 lb. each)
- 1/4 cup unsalted butter
- 2-1/2 cups sliced leeks (about 2 medium leeks; white and light green parts), rinsed well
- 2 medium cloves garlic, minced
- Kosher salt and freshly ground black pepper
- 2 cups homemade or low-salt canned chicken broth
- 1/2 cup milk
- 1/2 cup sour cream
- 4 thick slices bacon, cut into 1/2-inch dice
- 1 cup grated sharp Cheddar (about 1/4 lb.)
- 2 Tbs. thinly sliced scallion greens or chives
Slow Cooker Applesauce

Add all ingredients to your slow cooker and cook on high for 2 hours or low for 4 hours

- 1 (16-oz) pkg chopped fresh kale
- 4 cups whole milk
- 6 Tbsp cold salted butter, cut into pieces
- 1 cup chopped yellow onion (from 1 onion)
- 6 Tbsp all-purpose flour
- 1 (8-oz) pkg preshredded Monterey Jack cheese (about 2 cups)
- 1 tsp hot sauce
- 1/2 tsp black pepper
- 8 oz uncooked medium-size shell pasta, cooked according to package directions
