Peach Kolachy Rolls

Excellent way to enjoy summer peaches
- 6 Rhodes Texas™ Rolls, thawed but still cold
- Peach jam or preserves
- 1 cup powdered sugar
- 1 tablespoon butter, melted
- 1/2 teaspoon vanilla
- 2 to 3 tablespoons milk
Bourbon Mashed Sweet Potatoes

Place the sweet potato chunks in a large (5 quart) pot, cover with water
- 3 pounds garnet sweet potatoes, peeled and cut into 1 inch chunks
- Salt
- 3 to 4 Tbsp of bourbon whisky
- 4 Tbsp butter (more or less to taste)
- 4 Tbsp brown sugar (more or less to taste)
- 2 teaspoons vanilla extract
Croque-Monsieur

Melt butter in a saucepan over medium heat
- 2 tablespoons unsalted butter, plus more for bread
- 2 tablespoons all-purpose flour
- 2 cups whole milk
- 1/2 cup grated Gruyere cheese, plus 8 slices
- 1/2 cup grated Parmesan cheese
- 8 thick slices rustic bread
- 12 slices ham
- Dijon mustard, for bread
Grilled Pizza Bread

In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain
- 1 pound ground turkey or beef
- 1/2 cup chopped onion
- 1 can (8 ounces) tomato sauce
- 1/2 teaspoon salt
- 1/2 teaspoon dried oregano
- 1 loaf (1 pound) French bread
- 1 cup (4 ounces) shredded part-skim mozzarella cheese
- 1 can (2-1/4 ounces) sliced ripe olives, drained
- Sliced pepperoni, optional
Spaghetti

Throw it all in the pot, INCLUDING the uncooked Pasta, and cook! - Bring it to a boil, then reduce to a simmer
- 12 ounces pasta (I used Linguine)
- 1 can (15 ounces) diced tomatoes with liquid ( I used zesty red pepper flavor)
- 1 large sweet onion, cut in julienne strips
- 4 cloves garlic, thinly sliced
- 1/2 teaspoon red pepper flakes
- 2 teaspoons dried oregano leaves
- 2 large sprigs basil, chopped
- 4 1/2 cups vegetable broth (regular broth and NOT low sodium)
- 2 tablespoons extra virgin olive oil
- Parmesan cheese for garnish
Authentic Homemade Taco Seasoning Mix

- 1/2 tsp ground Coriander

- 8 Tbsp (1 stick, 4 ounces) unsalted butter
- 1/2 cup Dutch processed cocoa
- 2 ounces bittersweet chocolate, chopped
- 3/4 cup flour
- 3/4 teaspoon baking powder
- 1/2 teaspoon baking soda
- 2 large eggs
- 1/2 teaspoon salt
- 3/4 cup sugar
- 1 1/2 teaspoons mint extract
- 1/2 cup sour cream
- 8 Tbsp butter, room temperature (1 stick, 4 ounces)
- 1 Tbsp milk
- 1/4 to 1/2 teaspoon peppermint extract
- 2 cups powdered sugar
- 4 ounces cream cheese, room temperature
- 4 Tbps butter, room temperature (1/2 stick, 2 ounces)
- 1/4 to 1/2 teaspoon peppermint extract
- 1 1/2 cups powdered sugar (confectioner's sugar)
- Fresh mint for garnish
Palmiers (Elephant Ears)

Preheat oven to 400°F. Sprinkle about 1/4 cup of sugar over your workstation
- Lots of granulated sugar
- Puff pastry
- Parchment Paper (aka baking paper) or a Silpat baking mat
Angel Fruit Cake Dessert

Mix the first 3 ingredients together until stiff
- 1/2 c sweetened condensed milk
- 1/2 c cold water
- 1 pkg instant vanilla pudding
- (do not follow pkg instructions)
- 1 12 oz Cool Whip
- 1 angelfood cake cubed (set aside)
- 1 pkg Danish Dessert (follow pkg instructions)
- 2 Ibs sliced strawberries, leave one whole for final garnish
