Spaghetti Squash Lasagna

Preheat oven to 400º. Cut spaghetti squash in half lengthwise and scoop out seeds and membrane
- 2-3 small to medium spaghetti squash
- salt and fresh pepper, to taste
- 1/3 c. part skim ricotta cheese
- 2 Tbsp. grated parmesan cheese
- 1 Tbsp. chopped parsley (or basil)
- 3/4 c. mozzarella cheese, shredded
- 1 tsp olive oil
- 1/2 onion, finely chopped
- 3 cloves garlic, minced
- 14 oz Italian chicken sausage (you can also use reduced fat sausage if you can't find the chicken sausage)
- 14 oz (1/2 can) crushed tomatoes
- salt and fresh pepper, to taste
- 2 Tbsp chopped basil
Homemade Nutella

Place the nuts in the bowl of a food processor and process for 4 to 5 minutes, until the nuts form a smooth paste
- 1 c whole blanched hazelnuts
- 1 c whole blanched almonds
- 1 1/4 c powdered sugar, sifted
- 1/3 c unsweetened cocoa powder, sifted
- 1/2 t pure vanilla extract
- 1/4 t Kosher Salt
- 3 T vegetable oil

Grilled Chicken Sausage with Pears

Preheat grill to medium-high
- 2 tablespoons fresh lemon juice
- 1 tablespoon Dijon mustard
- 1/4 cup extra-virgin olive oil
- 1 teaspoon coarse salt
- Freshly ground pepper, to taste
- 4 firm, ripe pears, cut lengthwise into 1/4-inch-thick slices
- 8 precooked chicken-and-apple sausage links, pricked with a fork
- Fresh thyme, chutney, and assorted mustards, for serving
Carne Asada

1.Lay the flank steak in a large non-reactive bowl or baking dish
- Marinade:
- 2 pounds flank or skirt steak
- Olive oil
- Kosher salt and freshly ground black pepper
- 4 garlic cloves, minced
- 1 jalapeño chile pepper, seeded and minced
- 1 teaspoon freshly ground cumin seed (best to lightly toast the seeds first, then grind them)
- 1 large handful fresh cilantro, leaves and stems, finely chopped (great flavor in the stems)
- Kosher salt and freshly ground black pepper
- 2 limes, juiced
- 2 tablespoons white vinegar
- 1/2 teaspoon sugar
- 1/2 cup olive oil

Meaty Cheese Manicotti

- 1 (8-ounce) package uncooked manicotti shells
- 1/2 pound hot Italian sausage
- 1/2 pound ground round
- 1 medium onion, chopped
- 1/2 cup dry white wine
- 2 cups whipping cream
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 (14 1/2-ounce) can diced tomatoes with basil, garlic, and oregano, drained
- 2 cups (8 ounces) shredded mozzarella cheese
- 3/4 cup shredded Parmesan cheese
Hot Crab Dip

Preheat oven to 350. Combine shredded crab and lemon juice in a large bowl and then add the remaining ingredients
- 2 8-oz. packages cream cheese (light is fine)
- 1 c. mayonnaise (light is fine, but no Miracle Whip)
- 1 c. shredded Parmesan cheese
- 1 1/2 c. (about 6-8 oz.) shredded crab
- Juice of 1 small lemon (about 1 tablespoon)
- 5-6 cloves garlic, minced
- 1/2 c. chopped green onions (about 1 bunch)
- 1 tablespoon of Creole or mild coarse-grain mustard
- 1/4 tsp. cayenne pepper (optional)
