- 2 cups (12 ounces) chocolate chips, optional

- 4 cups (24 ounces) semisweet chocolate chips
- 2 tablespoons (3/4 ounce) light corn syrup
- 4 tablespoons (1/2 stick, 2 ounces) unsalted butter

Mini Dutch Apple Pancakes

- 1 large Granny Smith apple, peeled, cored
- and cut into 1/2-inch slices
- 3 Tbs. granulated sugar
- 1/2 tsp. ground cinnamon

- 3/4 cup all-purpose flour
- 3/4 cup milk
- 1 Tbs. sour cream
- 1/8 tsp. salt
- 1 tsp. grated lemon zest
- Confectioners' sugar for dusting
Zucchini Fritters with Herbed Yogurt (Sumac)

To make the yogurt sauce, in a bowl, stir together the yogurt, garlic and mint, and season with salt and pepper
- FOR THE HERBED YOGURT:
- 1 1/2 cups Greek yogurt
- 1 garlic clove, minced
- 1/2 cup chopped fresh mint
- Salt and freshly ground pepper, to taste
- Ground sumac for sprinkling
- Extra-virgin olive oil for drizzling (optional)
- FOR THE FRITTERS:
- 1/2 cup all-purpose flour
- 2 eggs
- 2 Tbs. milk
- Finely grated zest and juice of 1 lemon, plus 2 lemons, cut into wedges
- Salt and freshly ground pepper, to taste
- 1 garlic clove, minced
- 1/4 cup chopped fresh flat-leaf parsley
- 1/4 cup chopped fresh mint
- 1/4 tsp. ground sumac
- 4 Tbs. olive oil
- 4 zucchini, cut into thin ribbons on a mandolin

- 2 tablespoons vegetable oil or salad oil
- 1 cup + 2 tablespoons lukewarm water
- FILLING
- 3/4 lb. mozzarella cheese, sliced
- 1 pound Italian sweet or hot sausage, cooked and sliced; or about 3 cups of the sautéed vegetables of your choice
- 28 -ounce can plum tomatoes, lightly crushed; or 28-ounce can diced or chopped tomatoes
- 2 to 4 garlic cloves, peeled and minced, optional
- 1 tablespoon sugar, optional
- 1 to 2 teaspoons Pizza Seasoning or mixed dried Italian herbs (oregano, basil, rosemary), to taste
