  • 3 Tbs. olive oil
  • 2 Tbs. unsalted butter
  • 12 oz. white button mushrooms, sliced
  • 8 oz. shiitake mushrooms, stemmed and sliced
  • 1 yellow onion, chopped
  • 2 garlic cloves, minced
  • 1 tsp. chopped fresh thyme
  • 1 Tbs. Champagne vinegar
  • 4 cups low-sodium chicken or vegetable stock or canned broth
  • 2 cups heavy cream
  • Salt and freshly ground pepper, to taste
  • Chopped fresh chives for garnish
