Crockpot Pumpkin Soup

Melt two thirds of the butter in a heavy pan, add pumpkin and onion, cover and cook gently for 10 minutes
- 3 oz (90g) butter
- 2 lb (1kg) peeled, chopped pumpkin

- 3 cups water
- 2 cups milk
- 1 tbsp flour
- grated nutmeg to taste

Steamed Cranberry Pudding

- 1 1/2 cups coarsely chopped fresh cranberries
- 3 tablespoons granulated sugar
- 1 1⁄2 cups unbleached all-purpose flour
- 1 1/4 teaspoom baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 4 tablespoons (1/2 stick) unsalted butter, at room temperature
- 1/2 cup firmly packed light brown sugar
- 1/4 cup unsulfured light molasses
- 2 teaspoons minced orange zest
- 1/3 cup buttermilk
- Boiling water, as needed
- RUM-BRANDY ICE CREAM
- 4 egg yolks
- 2 ⁄3 cup sugar
- 1 ⁄2 teaspoon freshly grated nutmeg
- 2 1⁄2 cups half-and-half
- 1 1⁄2 cups heavy cream
- 1 teaspoon vanilla extract
- 2 tablespoons dark rum

Brown Sugar-Raisin Bread

Measure brown sugar by firmly packing it into a measuring cup
- For the filling:
- 1 Tbs. active dry yeast
- 3 Tbs. granulated sugar
- 1 1⁄4 cups warm water (105° to 115°F)
- 1 cup warm milk (105° to 115°F)
- 3 Tbs. unsalted butter, melted
- 1 Tbs. salt
- 1 egg, lightly beaten
- 6 to 6 1⁄4 cups bread flour, plus more
- as needed
- 3 ⁄4 cup golden raisins
- 3 ⁄4 cup dark raisins
- 2 ⁄3 cup firmly packed light brown sugar
- mixed with 4 1⁄2 tsp. ground cinnamon
Reuben Casserole

Heat oven to 350ºF. Grease or spray 2 1/2-qt baking dish
- 4 cups water
- 1 1/2 cups milk
- 1/3 cup butter or margarine
- 1 tablespoon yellow mustard
- 2 pouches (4.7 oz each) Betty Crocker™ roasted garlic mashed potatoes
- 1 package (6 ounces) sliced corned beef, cut into 1/2-inch pieces
- 1 can (14 1/2 ounces) sauerkraut , rinsed well and drained
- 2 cups shredded Swiss cheese (8 ounces)
- 4 teaspoons caraway seed, if desired
- Thousand Island Dressing, if desired
