- CRUST
- 10 ounces King Arthur Mellow Pastry Blend
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1/2 ounce confectioners' sugar
- 1/2 ounce buttermilk powder
- 1 5/8 ounces vegetable shortening
- 5 ounces very cold unsalted butter
- 1 teaspoon vinegar, cider or white
- 3 1/2 to 5 ounces ice water
- TOPPING
- 1 teaspoon milk
- 1 tablespoon coarse sparkling sugar
Maple-Vanilla-Peach Jam

To prepare the calcium water, in a small, clear jar with a lid, combine the calcium powder and the 1/2 cup water
- For the calcium water:
- 1/2 tsp. calcium powder
- 1/2 cup water
- 3 1/4 lb. fully ripe peaches (see “Perfect Peaches” tip below)
- 1 vanilla bean
- 1/4 cup lemon juice
- 3/4 cup pure maple syrup
- 3 tsp. Pomona's universal pectin
Raspberry Puff Turnovers

- Dough
- 6 1/4 ounces Unbleached All-Purpose Flour
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 8 ounces cold butter
- 4 ounces sour cream
- Filling
- 7/8 ounce Instant ClearJel or cornstarch
- 4 5/8 ounces sugar
- 12 ounces raspberries, fresh or frozen
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1 large egg beaten with 1 tablespoon water, to seal pastries (optional)
- *If you use cornstarch, you'll want to dissolve it in cold water, rather than stir it into the sugar.

- 90 g butter
- 1/3 cup brown sugar
- 1/3 cup golden syrup
- 1 1/3 cups plain flour
- 3/4 tsp bicarbonate of soda

- 5 cups mixed sliced peaches and blueberries, or fruit of your choice
