Creamy Mushroom Ravioli

In a large skillet, melt the butter and saute garlic for 1 minute, until fragrant
- 2 tbsp butter
- 2 garlic clove (minced)
- 4 cups sliced mushrooms
- 1 cup reduced fat or whole milk
- 2 tbsp all purpose flour
- 1/2 cup grated Parmesan cheese
- 10 oz Four Cheese Ravioli (I use Rana brand)
- salt, pepper
- parsley and grated Parmesan to garnish
Fluffy & Tender Pancakes with Crispy Edges

Combine milk and white vinegar
- 1/2 cup butter, melted
- 2 cups buttermilk, room temperature (see tips for buttermilk substitute)
- 3 large eggs
- 2 cups unbleached flour
- 1/2 cup yellow or white cornmeal
- 2 Tablespoons white granulated sugar
- 2 Tablespoons baking powder
- 1/2 teaspoon baking soda
- 1 1/2 teaspoons salt
Mango Salsa

In a medium bowl, mix mango, red bell pepper, green onion, cilantro, jalapeno, lime juice, and lemon juice
- 1 mango - peeled, seeded and chopped
- 2 tablespoons finely chopped red bell pepper
- 1 green onion, chopped
- 1 tablespoon chopped cilantro
- 1 fresh jalapeno chile pepper, finely chopped
- 1 tablespoon lime juice
- 1-1/2 teaspoons lemon juice
Baked Sweet Potato Fries

Preheat oven to 400ºF. Coat potatoes with olive oil
- 2 medium sweet potatoes, peeled
- 2 tbsp. olive oil
- 1/2 tsp. kosher salt
- 1/2 tsp. freshly ground black pepper
Pasta with Sausage, Tomatoes, and Mushrooms

Sauté sausage in heavy large pot over medium-high heat until brown, about 12 minutes
- 2 1/2 pounds Italian sweet sausages, casings removed, crumbled
- 3 tablespoons olive oil
- 1 1/2 pounds mushrooms, thickly sliced
- 3 cups chopped onions
- 1 1/2 cups chopped fresh basil
- 1/4 cup chopped fresh oregano
- 6 large garlic cloves, chopped
- 1 cup dry white wine
- 5 cups canned crushed tomatoes with added puree
- 2 cups diced tomatoes (about 4 medium-large tomatoes)
- 2 tablespoons (1/4 stick) butter
- 1 1/4 pounds pappardelle or mafaldine pasta (or any wide, flat noodles)
- 1 1/2 cups grated pecorino Romano cheese (about 4 1/2 ounces)

Preheat oven to 350°. To prepare cake, lightly spoon flour into dry measuring cups; level with a knife
- Frosting:
- 1 1/2 cups all-purpose flour
- 1 1/3 cups granulated sugar
- 1/2 cup sweetened flaked coconut
- 1/3 cup chopped pecans
- 2 teaspoons baking soda
- 1 teaspoon salt
- 2 teaspoons ground cinnamon
- 3 tablespoons canola oil
- 2 large eggs
- 2 cups grated carrot
- 1 1/2 cups canned crushed pineapple, drained
- 2 tablespoons butter, softened

- 3 cups chopped yellow onions (2 large onions)
- 2 tablespoons good olive oil
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 1 teaspoon fresh thyme leaves (1/2 teaspoon dried)
- 1/3 cup Worcestershire sauce
- 3/4 cup chicken stock
- 1 1/2 teaspoons tomato paste
- 5 pounds ground turkey breast
- 1 1/2 cups plain dry bread crumbs
- 3 extra-large eggs, beaten
- 3/4 cup ketchup
