Vegetable Soup

In 3-quart soup pot, saute onion, celery, and carrots in olive oil for 10 minutes, stirring often
- 1 1/2 cups onion, chopped
- 2 celery stalks, diced
- 1/2 cup carrots, chopped
- 3 tablespoons olive oil
- 2 clove garlic, minced
- 1 cup zucchini, chopped
- 1 cup mushrooms, chopped
- 4 cups chicken broth
- 11 1/2 fluid ounces Tomato juice
- 1 tablespoon parsley flakes
- 2 cups spinach, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon lemon juice
Chicken Quesadillas

1. In a small bowl, combine tomatoes, onion, lime juice, cilantro, jalapeno, salt and pepper
- 2 tomatoes, diced
- 1 onion, finely chopped
- 2 limes, juiced
- 2 tablespoons chopped fresh cilantro
- 1 jalapeno pepper, seeded and minced
- salt and pepper to taste
- 2 tablespoons olive oil, divided
- 2 skinless, boneless chicken breast halves - cut into strips
- 1/2 onion, thinly sliced
- 1 green bell pepper, thinly sliced
- 2 cloves garlic, minced
- 4 (12 inch) flour tortillas
- 1 cup shredded Monterey Jack cheese
- 1/4 cup sour cream, for topping
